About this Cook
I'm "at home" for the first time in my life as of 2 years ago, when my husband's son came to live with us. I have always been able to cook and like to cook, but the amount I did was always limited since I worked full-time. Needless to say, I've been "honing my skills" the last couple years.
My favorite things to cook
My husband, stepson, and I all really like Tex-Mex and other spicy dishes. My family also likes roasted meats and casseroles. We all likes desserts, but I don't make as many because I have a hard time staying away from sweets. I like to experiment with fruit salads, because it's healthy and I can make just enough for one serving each with no leftovers.
My favorite family cooking traditions
My family is German, and I'm from the Midwest, so I grew up with lots of GREAT German foods and also very hearty meat-and-potatoes type meals and casseroles. Everyone in my family is a good cook--no exceptions. I don't get to see any of my family much anymore, but the meals I ate in my childhood are still some of my favorites.
My cooking triumphs
My grandmother's and stepmother's German recipes apparently went to the grave with them. I didn't learn the recipes growing up, so I'm trying to find the recipes and learn them now. I was brave enough to attempt Rouladen (one of my childhood favorites) to take to a potluck! It was delicious and a great success! I have also mastered klups, which unfortunately I like much more than my husband and stepson.
My cooking tragedies
I honestly can't recall any true tragedies. However, my husband (who is usually not much opinionated about anything) informed me that he could go the rest of his life without ever eating tuna casserole again. :(

Thai Chicken Cabbage Soup
I was so excitee about this recipe and so terribly disappointed. I followed the recipe exactly. It was completely bland. I couldn't add enough of the Thai sauce--but there was still no flavor, only heat. Family felt the same way. Who can figure?

Oven Fried Parmesan Chicken
A hit with the whole family! I doctored up the breadcrumbs with additional Italian herb seasoning. I too coated the chicken with flour first, and I added salt, pepper, and poultry seasoning to the flour. This was moist, smelled YUMMY, tasted YUMMY, and the bread coating was not too thick, not too thin, and stayed on the chicken while cutting with a knife and fork. Definitely a keeper!
