Caesar Salad Supreme

Wonderful!!!! I made for my son's 12th birthday along w/ baked spaghetti! My 9 year old couldn't get enough! I used anchovy paste, light mayo and jarred diced garlic! Yummy, yummy!!!! Just as good as any caesar that you will get at a restaurant.. No.. it's better! Because YOU make it!!! Enjoy this one! Thanks so much for posting!

Italian Sausage Tortellini Soup

This soup was spectacular! Even my pick 8 and 11 year old LOVED it!!! The taste is robust and warming on a cold night! The only change I made in lieu of time was to use canned petite tomatoes (undrained). I served w/ cheese quesadillas! Definitely a keeper! YUM!

Sweet Potato Souffle III

Made this wonderful dish for Christmas! I have a son who is allergic to nuts so I substituted the nuts with oatmeal that I pulsed. Tasted like an oatmeal cookie on top!! Everyone loved it! Will definitely make again!

Good Old Fashioned Pancakes

Bisquick? No more!! I use Mommy Quick! This is great just as it is - although I only added 3 tsp baking powder - 2 1/2 would also probably be fine. I add a little extra milk (to make them not cake like) vanilla and a shake of nutmeg and cinnamon! You could also experiment w/ other more healthy flours! They smell just as wonderful as they taste. You can add bananas, blueberries or chocolate chips as we have done one morning! It was just like I-Hop!!!!!

Brisket with BBQ Sauce

My husband was convinced that he was not going to eat brisket. LOL. I needed something easy to make for the day since I was working all day. I doubled the sauce and only added half of the mustard. It was gobbled down!! I will serve this to all the hungry men in the house from now on!! I'd like more recipes like this one!

Chicken Cordon Bleu II

The key is to pound the chicken until it is very thin or purchase purchase thinly cut cutlets. The sauce is exquisite. My cooking time was less than 30 min - 20 was perfect!!! I served w/ rice and peas and carrots to two boys (7 & 9) and my husband to rave reviews! I only used 3 tbsps of butter and replaced the cream with half and half!!! Perfect!

Rosemary Chicken with Orange-Maple Glaze

This was good.... I think I expected "more" flavor and perhaps will test more rosemary or some alternate seasoning on the chicken. I did add cornstarch to the last 1/4 cup of orange juice and added it to the orange/maple mixture when I turned the chicken over. My husband referred to it as almost a Hawaiian taste. I'm going to experiment more - maybe pineapple juice & bits (would be nice in the summer) or adding some ginger. I served with rice and green peas. My two children liked it. I'll try couscous next time.

Aunt Carol's Spinach and Fish Bake

I cooked this recipe as a skeptic. Of course my kids 5 & 7 don't eat fish so I was searching. I altered the recipe after reading the reviews w/ onions, garlic powder, onion powder and salt. Beyond my expectations... My 7 yr old (the worst of the eaters) said Mom... this chicken is an A! I let him think it was chicken! I'm so happy! I want to try and make the sauce saucier next time... Maybe some milk or cheddar cheese soup.. not a lot, but would make for more sauce! This one's a winner! My husband even liked it! A Wow!

Chicken Fried Chicken

I give the recipe high ratings and the cook - "me" low ratings! The first time I cooked it I used Chicken Breasts w/ rib bone as I was searching for the "true" fried chicken on Sunday! I put too much peanut oil in the skillet and wow it started to runneth over! Lots of fun to clean. After all the work we ate it and the mess was well worth it! I'm going to make it again tonight believe it?? I soak the chicken in buttermilk and like others up the seasoned salt, adding garlic & onion powder. Great taste! I've added it to my favorites!

Weeknight Chicken Cordon Bleu

"Weeknight" Chicken doesn't do this chicken justice. Although I made a few minor tweaks I made it when I was short on time on a Sunday evening! It was decadent for my husband and two boys! We will definitely have it again weekend or weeknight!

Bacon Wrapped Smokies

Ok...The Super Bowl has just started (it's a commercial - no score). I thought I would tell you how wonderful these are. I didn't have time to have to warm them up! They were gone fast! Everyone (old & young) liked! I will definiely make again!
