Vegan Cupcakes

Reviewed: Jul. 24, 2010
Excellent recipe! One of the best tasting vegan cake recipes I've come across. I like vegan recipes because they don't use eggs, which my son is allergic to. I made a few slight modifications. Instead of almond milk, I used regular skim milk, since my son is also allergic to nuts too. I also added about 1/4 c. of orange juice to the batter after all the ingredients were mixed. My family, especially my husband, loved the cupcakes. My son also asked me to make them for his class for his birthday in October. Thanks for sharing this awesome recipe.

Fried Green Beans

Used the concept of the recipe and put my own twist on it. Didn't measure (just threw the ingredients in the bowls) and added curry powder to the flour to give it a zing. The family loved it.

Baked Applesauce

Reviewed: Sep. 23, 2009
I made this for Rosh Hashanah (Jewish New Year) and it was a hit! I adjusted the recipe and used 6 apples of different varieties (granny smith, honey crisp, fuji, etc.). I also used half regular sugar and half brown sugar. I didn't mash the apples after it was cooked. I left them chunky to serve as a baked apple side dish. It was easy and tasted awesome! I plan to make again for Thanksgiving.

Tammy's Tempting Cheese Ball

Reviewed: Dec. 24, 2007
Delicious and easy! I followed the recipe exactly. I took it to my neighbor's party and it was gone amongst all the other goodies. This will now go into my recipe repetoire.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Nov. 22, 2007
Love this salad, especially the dressing, whicn I prepared on the side for the picky eaters. I added cherry tomatoes, omitted the nuts because of allergies and used shredded gruyere instead of traditional swiss. I also squeezed some lemon over the apples and pears to keep them from browning. It was awesome and a nice alternative for Thanksgiving rather than the traditional mixed green salad.

Ali's Amazing Bruschetta

Reviewed: Jun. 17, 2007
Very easy and fresh tasting. I used a combination of fresh and canned tomatoes. I ommitted the cheese. Would also be a great topping for pasta, fish or chicken (that's what I'm doing with the leftover tomato mixture.)

Mango Salsa

Reviewed: Jun. 17, 2007
Awesome! This is the first time I used mangoes but it turned out great. Make sure you get really ripe mangoes. I learned that they should be soft and give to the touch. I used the salsa as a topping for bruschetta. I sliced frech bread and brushed the slices with extra virgin olive oil then baked for about 10-15 minutes at 350. The I topped the bread with the salsa. I ommitted the jalepenos because I was concerned it would be too much heat. The green onions took care of that. I plan to cook with the left over salsa. Will definately make again.

Citrus-Basil Vinaigrette

Light and refreshing. I paired it with romaine lettuce with tomatoes, mandarin oranges, and dried cranberries. A perfect summer salad.

Chocolate Bar Fondue

Reviewed: Dec. 31, 2006
It came out as one thick mess from the heavy cream. I tried to thin it out with hot water but it became clumpy and oily. But the kids still ate it because after all, it's chocolate. Next time I'll take the simple route and just melt the chocolate without adding anything.

Cider Cheese Fondue

Absolutely delicious and easy! I added a pinch of kosher salt and garlic powder to bring out the flavors a bit more. Everyone loved it. It was a great inexpensive way for the kids to experience fondue.

Easy Decadent Truffles

Reviewed: Dec. 17, 2006
I made these for Thanksgiving and they were such a hit that I decided to make them for the holidays for teacher's gifts and potluck holiday parties at work. Don't worry if they are a little crumbly after they come out of the refrigerator. When you roll them, the warmth of your hand will make them pliable. They are also a great activity to do with your kids. My 7 year-old daughter loves to roll the truffles in different coatings.

Whipped Cream Frosting

Reviewed: Jan. 22, 2005
I didn't have heavy cream so I ommited it altogether. The frosting still tasted great, just like the stuff on top of a cinnabon.

Hot Artichoke Spinach Dip

Reviewed: Jan. 1, 2005
I would have prefered that it be mixed together rather than layered. Also, it look a longer to heat through than expected and it never really got "bubbly".

Toll House® Party Mix

Reviewed: Jan. 1, 2005
A yummy snack/dessert but it took much longer than expected for the chocolate to really harden and the mixture to firm up enough to eat without making a huge mess (like 3-4 hours or so). I would recommend making it a day ahead to be sure.

This one is a winner! I could eat the whole batch by myself! I highly recommend making it a day ahead so the flavors coagulate and fuse together.
