Honey Baked Lentils

This recipe is pretty easy to make and it's quick. My daughter told me about this recipe last summer and I'm finally getting around to making some as it's one of those do nothing dreary winter days. It just came out of the oven and my husband tasted it and promptly got himself a bowl. He said "This is really good!" I like the mild sweet taste and love that it is fat free.

Best Cream Of Broccoli Soup

I just made this for tomorrow night. We've been buying Subway's Cheddar and Broccoli soup and I make a good homemade version, but we've had Timmy Horton's cream of Broccoli soup a couple of times and I was looking for a recipe like that. It's just as good as the soup with cheese, but a bit healthier. This is just the soup I was looking to make. And very easy!

Crisp Little Lemon Cookies

It was easy, true. And I know the times they are a changing, but I was raised on homemade and do homemade myself. I love cakes made with cake mixes, but this cookie tasted like--well--eating a cake mix. Ok, but not great. I don't think I'll make them again. Also it was a bit of a pain to mix and mold the cookies because they were so dry. For a little more effort you could have a really great homemadelemon cookie.

Creamy Rice Pudding

This is the best rice pudding I've ever made. I only had long grain brown rice in the house and didn't want to wait until I could get white rice. I doubled the batch and used skim milk. I too added some cornstarch to the milk mixture. First I cooked the rice, then mixed up the eggs/milk/sugar/spices.(I used cinnamon, nutmeg and vanilla) I decided to cook the milk until thick and then add to the rice, which worked quite well. Mmmm. It's yummy, creamy and I will make this recipe again!

Absolutely Ultimate Potato Soup
