Dump Cake V

This is just like the one I remember my mom making us as kids. I asked her and she said the only difference was that she used an 11x7 pan (which would be a good idea for those of you who like thicker cake.) I think I might use only one stick of butter next time, simply to cut out some of the fat, but I'll have to see if it affects the outcome.

Chewy Granola Bars

I make this for my family all the time! It's great with all sorts of things mixed in. Try whatever you have around. We love it with raisins or peanut butter, but butterscotch chips are good as well as other dried fruits.

Gingerbread Biscotti

The flavor of these biscotti is very good and true to gingerbread, It made the whole house smell like the holidays! I happen to like my biscotti in the Italian tradition-meaning I prefer them to be more crunchy and these were rather soft for my taste, even after elongating the sencond baking time.

Hillbilly Pie

This got great reviews at a church "pie night." I made it first because my mom loves pecan pie, but isn't supposed to eat nuts now. It really does taste very similar to a pecan pie. And, it's very easy to make.

Stuffed Chicken Breasts with Gouda and Spinach

I don't like skin on my chicken, so I tried this in the relleno style--pounding the chicken flat and then spreading the filling on one half of the flattened chicken and rolling it up. This worked beautifully! And no skin! Try tucking the ends under and securing with toothpicks to keep the cheese from dripping out the sides so much.

Mimi's Tomato Soup Cake

This variation on a spice cake is moist and delicious and bursting with flavor. My picky husband was ready to write off anything with tomato soup as an ingredient, but declared it absolutely wonderful after the first bite. If you like spice cake, you must give this a try!

Award Winning Soft Chocolate Chip Cookies

This is by far the best chocolate chip cookie recipe I have found. The cookies stay soft if you store them airtight. I have to hide them or my husband would eat them all day long.
