About this Cook
I'm a beginner cook. I can cook a few old-fashioned southern dishes, but as I'm beginning to struggle with menopausal weight gain, I finding that I need to change my eating habits to healthier more balanced meals. Cooking Healthy is something I KNOW ABSOLUTELY NOTHING ABOUT.
My favorite things to cook
Not necessarily my favorite but I am comfortable cooking chicken and pork and catfish. I like pretty much all green vegetables except Brussel sprouts (which I think should be against the law). Most of the vegetable I cook or either canned or frozen so I would really like to learn to pick and cook with fresh veggies.

Baked Spaghetti Squash with Beef and Veggies
I was looking for a way to "casserole" spaghetti squash and this was a pretty good base recipe. I'm not the worlds best cook so I use the words "base" with some hesitancy and did so because I had read the previous reviews and saw where many said to increase salt/pepper -- which I did and I also increased the oregano and basil to 1 teaspoon each. I used Italian Sausage in lieu of ground beef which I think helped bump up the taste. I used Reduced Fat Mexican Cheese (because that's what I had and was too lazy to go to store) and it still came out pretty tasty...other reviewers suggested cutting the cheese but I didn't and liked the cheesiness of it. I wasn't sure if I was supposed to bake it covered or uncovered so I did uncovered fearing it would probably come out somewhat dry BUT to my surprise it didn't. I LOVED it...had to stop myself from eating half the pan. Definitely adding this to my recipe arsenal.

Unstuffed Cabbage Roll
I've always wanted to try this but was too intimated by the idea. This recipe was simple enough to give me the courage to try it and I was amazed at how good it was! Given that so many had mentioned that it needed more spice...I did take heed of that and used Rotel diced tomatoes with green chilies and salt and pepper to my taste. I may try adding rice next time just to get rid of some of the water...I didn't add any extra (or even the 1/2 cup called for) and there was still a sufficient amount of "juice" I topped with Parmesean cheese and it was DELICIOUS. Thanks for the recipe and adding a new dish to my list of "I can cook".

Rosemary Roasted Butternut Squash
this was my first time trying Butternut Squash and let me just ECHO what everyone else has said about the cutting...GOOD LAWD...even with a brand new knife it wasn't easy. It would have been helpful (since I didn't have sense enough to Google it beforehand) to know how much dried Rosemary is the equivalent of 2 sprigs (don't think I used enough) and as a beginner cook it would have been helpful to have more specifics on salt instead of "to taste" especially given that I didn't know what Butternut Squash was supposed to taste like. Now with that came about pretty good and I THINK I like Butternut squash but the verdict is still out on if I like it enough to hassle with cutting/peeling it...but overall this was a pretty simple and tasty (might have been more tasty had I known how to better season) recipe for me to start with.
