Slow Cooker Western Omelet

I adjusted this recipe for 3 servings and it came out delicious! It cooked in about 6 hours. Next time I want to substitute a can of drained spinach for the ham, onion and pepper, for a spinach omelet. I imagine you could use anything you would put in a regular omelet.

Slow Cooker Risotto

I used Lipton's Onion Soup and omitted the onion, since the soup already has onion in it. I omitted the salt, and just added a dash to season to my taste while eating, as I don't like a lot of salt in my food. Everything else same as recipe calls for. It was cooked in about 2 hours. It was delicious! I will make this again.

A Surprise-Inside French Toast

I used ricotta cheese and cream cheese, as I have no cottage cheese on hand. I have made French Toast before using either one of the cheeses, but had not tried both together - it was WONDERFUL! Instead of cutting and stuffing the bread, I simply made sandwiches with the bread and cheese mixture - that worked great, too! I used real eggs and regular milk. I also added a bit of cinnamon and vanilla extract to the cheese and the egg/milk mixtures. EXCELLENT! A definite keeper!

Easy Slow Cooker Chicken

What could be easier - just open a coupla cans of soup and toss in a chicken ... lolol I made this, and it was WONDERFUL! It reminded me of a similar recipe my mother used to make years ago, which was a favorite of mine - so I bravely added 1/8 teaspoon of CURRY to the mix. It came out PERFECT. I adjusted serving size to TWO servings, for just myself, so that called for 1/2 can of each of the 3 soups. Later in the week, I cooked the remaining half cans of soup with just the rice, as I had no more chicken. Then I stirred in a can of tuna. STILL DELICIOUS :) This is now a staple of my easy, cheap cooking for one person. Thank you so much! :)

Berry Good French Toast Bake

I made this in my SLOW COOKER, as I do not have a stove. I didn't soak overnight, just threw it all in there lol I adjusted the servings to 2, for just myself, and it took about 2 hours to cook. It came out WONDERFUL! I used Texas Toast, and I don't have any flour so I used some Buttermilk Pancake Mix instead, which flour is it's mainly ingredient. Also didn't cube the bread, but instead made a " Sandwich" using sweetened. cream cheese. MMmm...this will be a weekend favorite for me from now on! :-)

Barbecued Beef

I made this with a 1/2-lb breakfast steak and 2 servings, for just myself. It came out WONDERFUL! I cut back on the vinegar, as some suggested, it was fine. I also added a small amount of olive oil to the mix. I will be making THIS.again!

Baked Slow Cooker Chicken

I m cooking- and just got a small crock pot at the thrift store. This recipe seemed simple enough, so I tried it. It came out WONDERFUL! I used boneless, SKINLESS ,thinly sliced chicken breasts. It came out juicy and tender. There.was some juice in the bottom of the pot, so I mixed that in some instant mashed potatoes. What a wonderful meal! I am so PROUD of myself for doing this :-) I rinsed and saved the aluminum foil balls, to reuse them again, and save foil and money.
