German Chicken

I wanted to like it! I used honey BBQ as others advised. Not even mashed potatoes could save it. I guess I don't like the combo with sauerkraut.

Tiramisu Layer Cake

I've made this twice. Once at sea level where it came together perfectly and easily and looked and served great. Everyone was impressed. The 2nd time I tried it at an altitude of 10000ft. No cake mixes here so I tried a high altitude white cake recipe and that worked fine. Not perfectly flat layers but close enough. THe marscaone mixture tirned to liquird as soon as I mized it though, and it realy didn't work for filling. I had to add cream cheese to bulk it up. Less flavor. Also, the icing, when I added the mascarpone mixture, totally fell flat so I had to start over and add very little of the cheese to the whipped cream. It worked okay, the cake fell apart when served but high altitude complicates things so I don't blame the recipe. I would just warn be careful what mascarpone you buy--not all will stay solid enough to fill a cake.

Pear Walnut Chicken

This was good overall. I also used sweetened apple juice (all I had) so it was necessary to reduce the sugar. After I tried it I thought it was still too sweet so I added more soy sauce. The only thing I didn't have was parsley which I don't care for anyway but I ended up adding some oregano which complemented well and added flavor. Also added a little cayenne to offsetthe sweet. With these adjustments it was just as fast and really tasty. I would cut the sugar completely out the next time even though I like sweet, pear and apple juice was enough.

Baby Spinach Omelet

I had never tried spinach with nutmeg so when I found baby spinach at my grocery store (I live in a country where it is rarely available) I was excited to try this--very yummy. I must say that I skimped on the spinach because a cup seemed like too much but then wished I'd put more. I did wilt the spinach with some onion before mixing it in (no onion powder and I was afraid the spinach would not soften enough) and I did a 1 egg, 3 whites combination to cut the fat. Yummy!

Strawberry Pineapple Chicken Bites

Expected to love it...it was "okay." Served as main dish on rice. Don't sell "chili sauce" here but used tomato sauce and added garlic and vinegar as substitute. Might depend a lot on the quality of your preserves and chili sauce.

Easy Crescent Rolls

Cottage Cheese Pancakes

This recipe has potential but HOW you cook it matters a lot. Since the batter is thin (depending upon the consistency of your cottage cheese), make sure you make very small pancakes. It is impossible to flip these if they are large since they stay custardy in the middle. It is also important to use medium, not high, heat. I used applesauce instead of oil and added a little sugar to the second batch.They are good without it but not sweet at all--reminded me of potato pancakes and were yummy served with applesauce and not syrup.

Addictive Sweet Potato Burritos

I liked it, but my boyfriend said it was "okay." I prefered I just put the bean mixture (I used black beans) and tomatoes with cheese and skip the sweet potatoes. I'm always looking for great sweet potato recipes but this one was less than awesome.

Spiced Apple-Carrot Casserole

I never buy apples or carrots, generally, but when I accidently ended up with both in my produce drawer, I went looking for a recipe to deal with them before they spoiled. This was great! I double the spices and sugar, added cinnamon, and drizzled honey and molasses before baking so it was super rich and yummy. More like sweet potatoes than like carrots.

Ceviche Peruano

I laughed so hard when I read that a reviewer sauteed this!! Ceviche is ONLY "cooked" in the lime juice and is not placed over heat of any kind. I've never seen white potato served in a cevicheria...but the sweet potato is a must. The onion should be sliced and this should NOT be eaten over crackers if you want authentic. Usually it is either plain fish (bass is more common than tilapia) or a lot of mixed sea creatures you won't find for sale in the States. Like a lot of Peruvians, I prefer the pure fish version.
