About this Cook
Hi, my name is Helene and I am 41 yrs old. I have been married to a wonderful man for 20 yrs and we have 3 boys, ages 18, 13 and 7. We live out in the "middle of nowhere" and have a horse, cows, chickens, 1 cat and 5 dogs. I work part time at our local elementary school as a substitute teacher and love it.
My favorite things to cook
I love to cook and we all love to try new things..except for my youngest that is..who will only eat things like pbj, pizza and burgers.
My favorite family cooking traditions
My grandmother's spagetti sauce and my mom's turkey stuffing for thanksgiving..although they never quite come out exactly the way they make it.
My cooking triumphs
Any time I try something new and I get the "smile of approval" from my guys...
My cooking tragedies
Ohhh....I never cooked before I was married so you could probably consider my entire first year of marriage a tragedy..LOL..My poor hubby lived on raw chicken, steaks like shoe leather and a lot of hamburger helper

Chicken Cordon Bleu II
Excellent!! But I made a few changes. I pounded my chicken breast halves so they were thin added a slice of ham and a slice of cheese and rolled the chicken breasts. I then dipped in egg and coated with panko bread crumbs and then browned. I then put the pan in the oven at 350 for abt 15-20 min. I made the sauce over the stove and used white cooking wine because that is what I had. A keeper for sure

Chicken Tortilla Soup I
I have to give it 5 stars, because even though I made some changes, they were very minor and just my preference. I am confident the original recipe would have been just as wonderful :). I omitted the hommony completely, added 2 cups of chicken broth, added 1 package of taco seasoning mix, used 1 can of rotell tomates and 1 can of chopped tomatoes and omitted the green chili peppers. I topped with cheese and crushed tortilla chips when served and it was out of this world. A keeper for sure...Thank you for sharing!

Chantal's New York Cheesecake
OMG is all I can say! I have NEVER made a cheesecake before..I found this recipe, read some of the reviews and decided to try it. I followed the directions exactly, and while my cake cracked a little in the middle while it was baking, I am going ot attribute that to all me :)....It didn't matter though, I wasn't looking for perfection in looks the first time around, the taste, on the other hand was amazing! I read somewhere that I should tap the full pan on the counter a few times before baking to get the excess air out, and I am going to try that this time around. I am fixing to make it again! Thank you so much for the recipe!
