Chicken Makhani (Indian Butter Chicken)

Reviewed: Jul. 13, 2011
I am told that tomato paste is the key but I used just a can of crushed/pureed tomatoes. The sourness added by the yogurt was a bit strong for my liking so next time I'll use more heavy cream and less yogurt. I will also use half chicken breast and half chicken thighs.

Gary's Stuffed Mushrooms

Reviewed: Dec. 19, 2010
Fabulous! I followed other reviewers' tips and reduced the butter to 1 cup and sauteed the chopped mushroom stems with the garlic. I used 1 can of canned crab meat because its what I had on hand. I also added Asiago cheese instead of parmesan because I didn't have any on hand. Finally, my batch of filling ended up making close to 30 med-large sized mushrooms.

Crab Stuffed Flounder

Reviewed: Apr. 17, 2010
Very nice flavours. I used imitation crab and it turned out wonderfully. Neither my husband nor son like mayonaise so I served it on the side rather than putting it directly on the fish.

To Die For Blueberry Muffins

Reviewed: Jan. 3, 2010
Recipe was good, although I took the suggestions of other reviewers and added vanilla and extra blueberries. I doubled the recipe but found thre was way too much of the crumb topping. Taste great though!

Three Meat Cannelloni Bake

Reviewed: Jan. 3, 2010
Although this was really time consuming, it turned out wonderfully, certainly worth the effort. I used fresh pasta (1 egg per 1 cup of flour with a bit of olive oil). I couldn't find any ground veal so I substituted it with spicy italian sausage which made for an interesting flavour combination. I also topped with grated mozza cheese.
