Salisbury Steak

Thank you to the other reviewers for your helpful suggestions! Like others, I tweaked this slightly and was very happy with the results. I added one can of cream of mushroom soup and one can of low sodium beef broth to the gravy mixture. I omitted the water and the ketchup. I seared the patties in a frying pan and placed them in a foil-lined 9x13 baking dish. I sauteed one 8 oz. container of sliced mushrooms in the frying pan after removing the patties, and then I added the cooked mushrooms to the gravy mixture. I poured the gravy mixture over the patties and cooked them in the oven at 350 degrees for 30 minutes. Delicious!

Delicious Ham and Potato Soup

This recipe is simple and delicious. I'm adding it to my list of "go to" recipes. The only changes I made were to use two can of low-sodium chicken broth in place of the water and bouillon granules, and to add 1/2 cup of very sharp cheddar cheese at the end. Yum!

Easy Chicken Enchiladas

This was really good. Like others suggested, I cut the cream cheese in half, added a can of drained green chilis, and added a can of mild enchilada sauce (half poured in the empty pan and the other half poured over the enchiladas before the cheese). I'd definitely make this again.

Smoky Grilled Pork Chops

Delicious! I used fresh garlic and added some canola oil to the marinade to stretch it (I had six large pork chops). I will definitely use this again.

Palmiers

Delicious. I had some old puff pastry in the freezer that I needed to use so I decided to make these, and I'm so glad I did. In addition to cinnamon, I sprinkled some nutmeg and crushed cloves inside. Yum! Next time I will try baking at a lower temperature as Lysa suggested in her review.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Fantastic! This was my third try at ribs (the other two times they weren't tender enough) and they were wonderful! I bought regular spare ribs because they were cheaper than baby back ribs. I used tomato paste seasoned with Italian herbs since that is what I had on hand, and I slathered the ribs with a pork dry rub prior to putting the ribs in the oven. These were absolutely wonderful. The ribs were tender and flavorful, and sauce was delicious and worth the time and effort. My family couldn't say enough about them, and my husband said they were as good as the ribs sold by the barbecue man who cooks in a huge smoker grill! This recipe is a DEFINITE keeper!!

Easiest Egg Nog

This is a simple, delicious recipe. I added more sugar so rather than 3T I mixed in about 1/4 cup) and it was perfect. I also put it in the freezer for an hour or so and then blended it again. Yummy!

Filipino Lumpia

This is a wonderful recipe and a staple of my kitchen now. I use spring roll wrappers because I haven't found lumpia wrappers, but they work fine. I use ground turkey instead of pork and at least 1 cup of chopped cabbage. In fact, I usually buy a "cole slaw mix" and chop up that along with some chopped baby carrots. I put a tablespoon or more of soy sauce, and I include a can of chopped water chestnuts. I use dried minced onion rather than spring onions. They're always a hit!
