Debdoozie's Blue Ribbon Chili

I have been in search of the perfect chili recipe for years. I have spent hours in the past browning pork and beef...dicing and sauteing fresh tomatoes, peppers, garlic and onions...measuring half a dozen spices... and allowing the chili to simmer for hours. I just threw this recipe together in 15 minutes and it is the best chili I have ever tasted! Definitely use medium Pace Picante Sauce and William's Original Chili Seasoning. Just don't admit how easy this is to make...no one will ever know.

Pasta with Scallops, Zucchini, and Tomatoes

This was a quick, easy and visually appealing dish I will definitely make again. I used the zucchini, Roma tomatoes and basil from my garden. After reading the reviews, I added garlic, onion and white wine, because I can't imagine pasta without it. I also think this would be equally as good with shrimp or chicken breast, depending on what you have on hand.

Rice with Summer Squash

This had unbelievable buttery flavor! If I had not prepared it myself, I never would have believed that it was cooked with merely one tablespoon of butter. I used brown rice and added a dash of onion and garlic powder. Can't wait to have this again!

Baked Halibut Steaks

Very good! You need to use halibut to get the right texture, as tilapia will turn to mush. I doubled up the veggies and added fresh oregano, which was perfect, as this is really more of a Greek dish than an Italian dish. Light and perfect for summer when the zucchini, tomatoes and herbs are abundant in the garden.

Red Pepper-Salmon Pasta

I love salmon, roasted red peppers and pasta, but the combination of the three just didn't do it for me. Except for adding a splash of cream to the sauce, I followed the recipe as written. I personally wouldn't serve this dish again.

Angel Hair Pasta with Shrimp and Basil

Based on past reviews, I tweaked the recipe by sauteing onion along with the garlic. I also added fresh baby spinach and a splash of cream at the end. Nice recipe that came together very quickly.

Roast Sticky Chicken-Rotisserie Style

My particular husband absolutely loved this! He was still talking about it the next morning! Need I say more? The only change I will make when preparing this in the future is to put some of the spice mixture under the skin. Very good recipe and great gravy!

Cajun Shrimp Orecchiette

Given how easy this was to prepare and how quickly it came together, I was surprised by the flavor! I used grape tomatoes, extra baby spinach and sprinkled parmigiano-reggiano over the top. Very good! I will definitely make this again!

Easy Slow Cooker French Dip

My teenage daughter and I ate half of the beef just waiting for my husband to get home from work. I added a heavy sprinkling of Lawry's Seasoning Salt, garlic, a dash of worcestershire and a Tbls. of Kitchen Bouquet. I grilled garlic bread, placed the beef, provolone cheese, sauteed onions and peppers on top, and served it as an open-faced sandwich. We will definitely have this again! GREAT recipe!

Quick Creamy Potato Soup

Very easy and very good! I added sauteed celery with the onion. Also, I boiled the potatoes in chicken broth instead of water and partially smashed the potatoes prior to adding the soup/milk mixture. When serving, I sprinkled the soup with diced bacon, scallions, and a dallup of sour cream. GREAT recipe, we all enjoyed it!

Slow Cooker Chicken Cacciatore

I soooooo wanted this recipe to be a keeper! We are boaters and love nothing more than to come home to a slow cooker meal after being on the water all day, as no one feels like getting cleaned up and going out for dinner. Unfortunately, this was VERY below average. I questioned chicken breasts in the slow cooker and rightfully so, they were extremely dry. I used Classico Marinara, tomato paste, fresh mushrooms, basil, green peppers, chopped onions, and dried oregano with a few red pepper flakes. Great ingredients, but this is definitely not a combination for the slow cooker. Guess we'll have to stick with beef! Sorry!

Merwin's Chicken Marsala

My teenage daughter exclaimed, "Oh my gosh, I can't stop eating this!" It is so tasty, you will want to double the sauce. I added shallots, garlic and diced prosciutto along with the mushrooms. Also, some corn starch dissolved in chicken broth and a splash of heavy cream just before serving to thicken the sauce. Great recipe!

Pollo Fajitas

Great fajitas! I doubled the marinade and added cumin, lemon pepper and oregano. I allowed the boneless/skinless chicken breasts to marinate for 4 hours prior to cooking. I used yellow and red bell peppers in addition to the green for extra color.

Baked Pork Chops I

I added sauteed onions, mushrooms and extra seasoning to enhance the taste of sauce. The chops were fork tender, similar to a beef roast that has been baked for an extended period of time. While the flavor was good, it was not extraordinary, just your basic weeknight meal.
