I enjoy cooking, but hate the cleaning up! I love to try new things, and don't believe in secret recipes.
My favorite things to cook
Cake, basted eggs, pumpkin rolls, & ziti.
My favorite family cooking traditions
Each holiday my family gets together to have a big meal together. We always have ham, (sometimes a turkey too), sweet potatoes, deviled eggs, mashed potatoes & gravy, rolls, green beans, and tons of desserts!!! My family loves to cook, and we have now divided up the dishes according to our specialities. I always bring a pumpkin roll, pumpkin pie, deviled eggs, mashed potatoes, & sweet potatoes.
My cooking triumphs
Making a pumpkin roll for the first time. It looked much harder than it was. Learning to decorate cakes!
My cooking tragedies
My first couple of layer cakes were always lopsided and ugly. When I first got married, I could only make spaghetti, manwhich, and eggs.

Ricotta Eggplant Rolls
These were excellent! I didn't have quite enough mozz. cheese & I added in some romano cheese. I also used Prego instead of making their sauce, so I can't comment on the sauce. But the eggplant rolls were awesome!! ! Just make sure that you fry them until they are nice and tender and that you get them thin enough. I will definitely make these again!

Three Cheese Manicotti II
LOVED IT! Definitely recommend using a pastry bag or a ziplock with the tip cut off to fill the shells. I followed the recipe exactly, and it's great!
