Mexican Rice III

Excellent recipe! We're not fans of too much spice so we left out the jalapeños - still very flavourful and colourful! Also replaced the chicken bouillon with vegetable bouillon. Will definitely be making it again!

Best of the Best Blueberry Muffins

This is my preferred muffin recipe these days - I cheat and use frozen berries though. I don't always use blueberries, a bag of frozen summer fruits tastes amazing too.

Willy's Juicy Steak

Made for boyfriend's birthday - he loved it! Steak was very moist and delicious. Used the leftover marinade on baked potatoes - wonderful!

Oatmeal Peanut Butter Cookies

These taste amazing. They freeze really well so they last for ages too. They didn't spread while baking so I flattened them slightly with a fork beforehand. Excellent cookies!

Best Brownies

These are the best brownies. I always make a double batch. I've never actually used the icing recipe included so I can’t vouch for it. I have used mint chocolate icing and chocolate cream cheese icing - both of which work very well.

Screaming Potatoes

I have a cask iron pot but not a skillet, it works fine, but they only need 30 minutes until they're soft and lovely inside. I couldn't find kosher salt when I went looking so I just use sea salt and it tastes great! We had them with the Teriyaki Tuna (from irakaway) it was all very good.

Teriyaki Tuna

I love teriyaki sauce and this was a wonderful way to have it. My partner loved it and insisted we have it again. We had the carrot and some Screaming Potatoes with the tuna and the leftover marinade was great for drowning all of it.

Easy Whipped Cream

Perfection! I haven't been able to get good whipped cream in the UK so I was delighted to find such an easy recipe to get what I needed for my pumpkin pie! One little warning, I would start whipping and nothing would happen for ages and I'd start to worry that I'd got the amounts wrong only for it to suddenly thicken up, so stick with it!

Applesauce

This is a godsend! I always end up with two or three apples leftover from the bag, the ones that are a little soft and not very tasty - they're perfect for applesauce! I love that any apple can be used and I mix and match and lot. Adding the sugar near the end gives me a lot of control over the sweetness. The texture is amazing, I love the lumpy bits. Thank you so much for sharing this!

Chicken Enchiladas V

Being a vegetarian, I substitute the chicken with Quorn Pieces and cream of chicken soup becomes cream of mushroom - works a treat! I don't use the margarine because of the way we cook the Quorn – heat from frozen with vegetable stock and Worcestershire sauce in boiled water. The Quorn, onions and chillies are added at the same time and flavour each other. I use fresh chillies instead of canned and I like some red chillies along with the green. After adding the soup and sour cream mixture to the chicken mixture and lining the pan I add a jar of salsa to the soup and sour cream. This gives it an extra kick and means that the sauce inside the enchilada is different from the outside. These enchiladas are wonderful served with Mexican rice, a spoonful of refried beans and some fresh salad. Love this recipe – thanks for sharing!

The Best Pizza Crust

Love this recipe! Only changes I made were mixing brown and white flour and I used butter instead of margarine and the best bit: I made it in my bread machine with the dough setting. Others are correct, more water is required, 1 cup seemed to do it last time. Very yummy crust and so easy to do with my bread machine.

Waffles I

I have been making these using a hand mixer for while and they always turned out yummy. I got a KitchenAid mixer as an early Christmas present and it completely made this recipe. They were absolutely delicious! I folded in fresh blueberries just before cooking them and they were amazing.
