Muffin Pan Frittatas

I love mini frittatas although, being Italian, frittata means that one of the ingredients is usually small diced potatoes. Without the potatoes, it's more of a quiche.

My recipe is very similar except instead of 12 oz. of tequila, it is split up into 6 oz. of tequila and 6 oz. of triple sec. You really need that hit of citrus flavor. Also, instead of the water, I use crushed ice. The margarita is stronger--at least at first. Everyone who has ever had this margarita asks for the recipe! Creamy Chicken and Wild Rice Soup

I made this soup incorporating reviewers' comments (adding onions, carrots, celery, garlic) and cutting down on the flour and butter. It was absolutely outstanding and what I would consider restaurant quality or better!

White Chocolate and Cranberry Cookies

I used dried cherries and added a teaspoon of cinnamon which complements the dried fruit and white chocolate and puts it over the top.

White Texas Sheet Cake

This is easily the most popular recipe on my cooking blog. It is absolutely delicious--or, as I like to say, "It's frantastic!" I cut down on the almond extract just a bit to balance it with the vanilla. You will not find a moister cake! As I said in my posting of it on my blog, "Saying this cake is moist is like saying the Atlantic Ocean is wet!"

Best Big, Fat, Chewy Chocolate Chip Cookie

These rank as one of the best chocolate chip cookies ever, and I say that having made countless recipes with a tweak here and a tweak there. This is one of the first recipes I posted when I started my cooking blog, and I still laugh whenever I read it.

Jordan Marsh Style Blueberry Muffins

This recipe is close but not the original, so I have adjusted my rating to 4 stars. If you switch to using butter and add a half cup of crushed blueberries, then it will become a 5-star recipe. Most of the online recipes I've seen leave out an important step to make them the authentic Jordan Marsh blueberry muffins as sold at the store. I’m over 60 years old and grew up in Boston enjoying these wonderful muffins. I have posted the recipe at my website Fran's Faves with the technique of crushing some of the blueberries to give the muffins their famous purplish hue. Enjoy!

White Texas Sheet Cake

I have made this fabulous cake many times. After the first time I made it, I tweaked the almond extract just a bit and added vanilla extract. The cake is to die for--I rate it an 11 on a scale of 10! I've posted it on my recipe blog Fran's Faves, and it is one of the most popular recipes on there.

Pollo Fajitas

Sorry, these flavors do not work for me in a Mexican fajita. I agree with the reviewer who said it smelled like meat loaf--and a bad one at that. There are much better taco and fajita recipes on this site.
