My favorite things to cook
There is literally nothing I don't like to cook with the exception of liver and onions! I still can't understand why something that smells so good cooking tastes so bad.
My favorite family cooking traditions
I love cooking my family's favorite dishes/desserts at every holiday throughout the year. There are so many it would take way more than 1,000 characters to describe them all but here's just a few: my special turkey stuffing at Thanksgiving, sweet potato casserole with apples on T day, my chocolate mousse truffle cake on special birthdays, molten chocolate cakes with chocolate mint sauce on Valentine's Day, pecan pie with its secret ingredient for holidays and my husband's birthday (it's his favorite), swan cream puffs for special dinners and occasions--and many, many more!
My cooking triumphs
I've been cooking for close to 50 years, so there have been many!
My cooking tragedies
The biggest "tragedy" was when I spilled half of my husband's special 50th birthday dinner on the floor when the pan was too heavy for me to carry! There was barely enough left for us to eat!!

Muffin Pan Frittatas
I love mini frittatas although, being Italian, frittata means that one of the ingredients is usually small diced potatoes. Without the potatoes, it's more of a quiche.

My recipe is very similar except instead of 12 oz. of tequila, it is split up into 6 oz. of tequila and 6 oz. of triple sec. You really need that hit of citrus flavor. Also, instead of the water, I use crushed ice. The margarita is stronger--at least at first. Everyone who has ever had this margarita asks for the recipe! Quinoa Pilaf with Shredded Chicken
Quinoa is protein rich and a great way to counter-balance carbs in this side dish.
