Simple Salisbury Steaks

Reviewed: Jul. 20, 2011
Only gave 4 stars since I made modifications, but this came out VERY good. I cannot cook with raw onion in my house so I used a packet of dry onion soup mix and added it to the beef. I kept everything else the same except the remaining can of soup I thinned with a bit of milk and a dash of worsteshire sauce and cooked as directed. This was VERY flavorful and tasted great with a side of mashed potatoes. Thinning out the soup made more gravy to put on the potatoes. Yummy!

Slow Cooker Chicken Taco Soup

Reviewed: Mar. 5, 2011
Wonderful and flavorful! Made this for a work potluck and everyone raved about it!!! Will make this again and again! Edited: I have made this the traditional way as well as a more milder version to be more kid friendly. For a milder taste I used 1 can diced and 1 can tomatoes with chilies, 1 can chicken broth instead of beer. Both taste amazing! I also have taken leftovers and drained the excess liquid and cooked enchilada style with flour tortillas in the oven for 30 min. with some of the drained liquid and cheese baked on top. It is fabulous! This recipe is so versitile and EASY!

Eggplant Parmesan II

Reviewed: Dec. 30, 2010
This was wonderful! I let the eggplant sweat for about 30 minutes as others suggested. I brushed olive oil on each breaded slice before baking at 450 for about 8 minutes each side. I then continued as the recipe said. It was perfectly tender on the inside with crisp coating. Served this with a side of buttered pasta and a simple salad. It was not greasy as other eggplant recipes I have made in the past. No need to look at other recipes, this is the ONE!

Double Quick Dinner Rolls

Reviewed: Dec. 28, 2010
AMAZING!!! Followed everything exactly but left out the onion powder. I saw many reviewers proofed the yeast first. I did not do this and it still came out perfect. The dough is sticky but just put a little flour on your hands when handling. I have made many bread recipes and this one really was QUICK and simple! Next time I make italian food I will try it with garlic powder and maybe some cheese on top. Perfect simple roll!

Pumpkin Gingerbread

Reviewed: Dec. 22, 2010
These came out great! I set the oven to 325 and had no burning issues. Made about 2 dozen muffins and one large loaf. The muffins baked for 25 minutes and the loaf for 1 hour. Great as gifts for many people since one batch made a large amount that could be split up and shared. I will be making this again and again!

Easier Chicken Marsala

Reviewed: Mar. 16, 2010
I really enjoyed this recipe. Did as another user reviewed and added a can of cream of mushroom soup and 1 cup of marsala. It came out creamy and wonderful. I would recommend purchasing quality marsala wine, do not use the "cooking wine" cheap bottled things. Using a quality wine from the actual wine section makes all the difference in the taste. Made buttered noodles with this and served it with a salad, it made a beautiful meal.

Depression Cake I

Reviewed: Jun. 14, 2009
I always have the items needed to make this in the pantry. It is wonderful and a nice dessert to make on a budget. With our grocery budget shrinking, it is nice to have a recipe for something sweet that doesn't require so many "extras". This cake is nice enough for company. It would also be nice with a cinnamon glaze drizzled on top, or some powederd sugar dusted on top - if you were trying to dress it up. We like it just the way it is. I use 1 cup water and 1 cup leftover coffee. Also I reduce the nutmeg to 1/2 tsp. just because this is my own personal taste. I have made it both ways and I prefer less nutmeg, however my husband doesn't notice a difference when I do. Great served warm right out of the oven with a nice cup of coffee.

Cinnamon Bread I

Reviewed: Apr. 11, 2009
This is a wonderful recipe! I made it tonight to have for breakfast company we are having in the morning. The entire house smelled warm and great! Needless to say, my husband tore right into it while it was still HOT and I had to make another one. This will be used again and again. It was not overly sweet and tastes great with a warm cup of coffee.

Mix-Easy Oatmeal-Raisin Cookies

Reviewed: Mar. 22, 2009
Awesome! I didn't change a thing except adding the extra 1 tsp of cinnamon. My husband ate 6 from off the cooling rack before waiting for them to cool. Wonderful warm with a cup of coffee. So wonderful. Love the use of a cake mix which I seem to always have stuffed in the pantry.

Garlic Cheese Quick Bread

Reviewed: Mar. 7, 2009
This was wonderful! I had some meatballs in the freezer and wanted a quick bread to make them something special. I whipped this up as muffins (28 min-@350, in a 12 muffin tin). They were perfect! The texture is more like a biscut, crumbly and soft. I could see what others said about it not coming out right as a loaf. I imagine this in a loaf would be difficult to slice and serve. As muffins they were just the right amount of crumbly and soft. I highly recommend making these!

Baked French Swirl Toast

Reviewed: Dec. 25, 2008
Just had this for Christmas breakfast. It was simple to put together and smelled wonderful baking while we opened presents.I was worried it would be too sweet, but surprisingly it was not that sweet at all. I served it with maple syrup on the side, it was the perfect compliment. I left out the cranberries and used raisins only. Wonderful breakfast treat! I will be sure to make this for many other breakfast celebrations.

Quick Lemon Poppy Seed Bread

Reviewed: Dec. 18, 2008
This recipe was just what I was looking for. I needed to make many small gifts for co-workers. This worked wonderfully. One recipe made enough for 5 mini loaf pans (each with about 2/3 cup of batter-and about a TBL left for each from the remnants in the bowl) I baked them for 35 minutes and they were perfect. Thanks for sharing!

Salsa Chicken

Reviewed: Aug. 31, 2008
This recipe was GREAT! I love salsa and I seriously think I could eat this chicken everyday! I served it with yellow rice and a side salad. It also is a simple recipe method that can be used with other flavors. I used the same recipe to make italian chicken, only instead of taco mix I used italian seasoning, garlic powder, and pepper. Topped it with a can of diced italian style tomatoes and then at the last 5 minutes sprinkled mozarella cheese until bubbly. Great simple recipe that is wonderful either with salsa or made italian style! THANKS SO MUCH!

Barbie's Tuna Salad

Reviewed: Aug. 24, 2008
This is a great recipe! I am on Weight Watchers and made some changes to make it more point friendly. I used 2 TBL fat free mayo 1 TBL reduced fat grated parmesean cheese And as I was making it I also adjusted the other seasonings. I think the amounts listed would be better suited for two cans of tuna. However this is just to my personal taste. Either way I used only 1/2 tsp dill, 1/2 TBL parsley and left everything else as is. Great recipe! I will use this as my main tuna salad recipe from now on :)

Ran out of tartar sauce and hadn't realized it until I was putting the fish into the oven! Whipped up a batch of this sauce and my husband and I were AMAZED!!! It tasted great. It really tastes much better than store bought. I will be using this again and again. Thanks for the great recipe.

Key Lime Pie VII

Reviewed: Jul. 4, 2008
I love this recipe. I am from Florida and have had many key lime pies when visiting key west. This is the most authentic tasting pie I have ever made at home. What is best is that it is SO SIMPLE! You can literally whip it up in no time. I used home made whipped topping (heavy whipping cream with a touch of sugar and vanilla) and spread it over the entire pie. I made this for my husbands birthday dinner party. I have since made this pie 3 more times. Everytime we are invited to dinner friends ask me to make this pie for them, it is PERFECT! Do not try another key lime pie recipe on this site, this is the only one you need!

Extra Easy Hummus

Reviewed: May 31, 2008
I used this recipe for a unit I was doing in my classroom. I had 3 groups of 6 students and gave them all the materials in a bowl. I let them mash it up using forks and then I blended the mash in a blender and let them eat it on pita bread. I was worried they wouldn't like it, but they DEVOURED it. Some of them began eating it straight from a spoon. It really is a great, kid friendly recipe that is easy and yummy. I LOVE how cost effective it is too. It tastes just as good as the 4.00 tubs you can get at the deli and it only cost 88 cents for a can of garbanzo beans. You can't beat that :) I have begun making it at home for myself too.

Old Fashioned Coconut Cream Pie

Reviewed: Mar. 23, 2008
This is a keeper. It came out wonderful! It takes a LONG time stirring on the stove, but the results are worth it. I used the frozen flaked coconut and did not toast the inside coconut, just the outside. I also did as others suggested and used half and half, coconut milk, and cornstarch. The results were to die for. Next time I make this I will use homemade whip cream. I used frozen whipped topping because of lack of time, and the topping came out OK... for all the time you spend stirring and mixing the filling, put the extra time to make homemade whipped topping. I will definetly do that next time. I made this for my first Easter dinner and my guests were in silence as they ate... I got many compliments. Thanks for the great recipe.
