Pesto Chicken Florentine

Delicious! I don't even like spinach, and I loved this recipe. I didn't have any Alfredo packets or jarred sauce, so I found an easy recipe for it here on the site and made that instead. It all came together beautifully.

Banana Banana Bread

Delicious, easy recipe. It took me about ten minutes to mix up the ingredients, so it's great if you're in a rush and want a snack you can throw together and pop in the oven. I only had about 1 1/3 c. of bananas, but it was still very good. I also added a 1/2 tsp. of vanilla extract, but I add that to almost everything, because I am a vanilla addict. :) Thanks for a great recipe!

Mandi's Cheesy Potato Soup

Delicious! This was a gorgeous soup, really thick and filling and perfect for a cold winter's night. The only change I made was to use soy milk, and 1T of Italian seasoning mix instead of steak seasoning. I wish I had doubled the recipe!

Pineapple Upside-Down Cake II

I bought a pineapple to mix with banana for my baby's breakfast, and ended up with quite a lot left over. I searched for recipes using fresh pineapple, and came across this one - YUM! I'm used to my gran's cake mix/canned pineapple recipe which is delicious, but I thought ours was at least as good as hers. I didn't have a cake pan on hand, so we used two loaf pans. It was a little flatter than normal, due to splitting the recipe into two pans, but it tasted fabulous!

Creamy Banana Bread

Delicious! We did end up using a *touch* more flour, maybe a little les than an extra 1/4 cup, to stiffen it up and we also left out the pecans since we didn't have any, but other than that we followed the recipe exactly. It turned out beautifully!

Chicken Tacos

Delicious and so easy! I made these with Quorn chicken pieces. Used 1 1/2 cups of Kool-Aid lemonade, and added onion salt in place of the onion powder and salt. I also added cayenne pepper for a little kick. Served with a mozarella mix, sour cream, and chopped tomatoes. Great flavor and so quick to make!

Potato Cheese Soup

Great recipe! We didn't have any Swiss cheese, so used a mixture of Red Leicster and Mozarella and it was delicious. Also added a dash of garlic powder for a little kick. Really nice, thick soup for a cold winter night.

Insanely Easy Vegetarian Chili

We were looking for a chili recipe that *didn't* include any meat substitutes because we've found it doesn't freeze very well. This one is fantastic! As per other reviewers, I cut the amount of red bell pepper in half since I wanted a spicier, less sweet chili. I also added about a tablespoon of green chiles for an extra kick. Once the finished product was in the bowl, we added a spoonful of sour cream and a handful of mixed shredded cheese and served with garlic bread. It was delicious and we've saved a batch in the freezer!
