Broccoli Casserole II

This was very good.I added a 1/4 cup diced onions and used ritz crackers. Very easy and stayed hot a long time.

Broccoli and Cheese Brunch Casserole

I used Italian sausage and topped it with six red bell pepper rings. It not only tasted great but made a wonderful presentation with a pepper ring on each serving. I did blanch the broccoli by pouring boiling water over it in a collander. Really yummy!

Carrot Cake III

This was excellent! I made it a day ahead, refrigerated it and then frosted it. I added a small can of crushed pineapple and cut the oil to 1 cup.The flavor was sensational. I used 3 cups sugar in the frosting and an extra teaspoon of vanilla.It makes way too much frosting so I used the extra on store bought cookies. Yum!

Cream Cheese Penguins

Super cute and fun to make. Be sure to use jumbo olives because Lindsay large and medium are the same size. I put them on a silver-colored platter with a cheeseball igloo and they were the highlight of the table. I piped them full of Rondelle with a ziploc bag with a corner cut off. Pretty easy once you get going. Enjoy!

Sauteed Garlic Asparagus

This is the best way I have ever found to cook asparagus! Simple to the max and yet elegant enough for company. It works well with broccoli too; just shorten the cooking time to 5 minutes. I tried olive oil instead of butter and it was just as good. Enjoy!

Slow Cooker Stuffing

Of course I tweeked this to suit my own tastes, but I did use the basic recipe and it was excellent! I will always make the stuffing this way. Easy to make and it doesn't take up stove or oven space. Also, because it's in the cooker there's no specific time that it has to be done; it's ready when you are. My family raved about and didn't know I had done anything different until I told them.

Best Ever Party Appetizer

Very good and very popular. I served it with crackers because I thought the bread would be too filling. I tossed it gently in a bowl, chilled it overnight and served it in a shallow platter. It was a bit oily so next time I'll cut back on that.

Slow-Cooker Chicken Tortilla Soup

Hubby raved about it and he was right; this IS good. I did use the tortilla chips and next time I'll make it a little hotter. I also topped it with thin slices of avocado. Yum!

Easy Sausage Strata

I use this recipe every Christmas morning. I have gotten a more souffle-like result by covering it for 40 minutes and uncovering it for 15. I alternate red & green bell pepper rings on top to make it more festive and add a little extra flavor. It bakes and rests while we open gifts. Delicious!
