Shrimp Scampi Bake

I feel a bit silly even rating this recipe, because I use this more as a guide then anything else. Shrimp is readily availible and cheap in Southern Alabama, we get ours fresh off the boat. Anyway, I omit the dijon mustard, clairify unsalted butter and garlic, steam the shrimp then add it to the butter to finish cooking, take the sauce off the heat to add the fresh herbs and parm. cheese. I serve it with salad and pasta.

Four Cheese Macaroni

Perfect for the pickiest of preschoolers. Used wacky mac for fun. For once my four year old tried something that wasn't neon orange. So simple that my hubby couldn't screw it up! Wonderfully rich and creamy, worth the money and extra calories (only on special occasions) :-)

Chicken and Dumplings III

I avoided making chicken and dumplings after watching my mother make it all by scratch. I saw how quick and easy this was and thought why not. Needless to say we will be using this recipe again. Exellent. I added a cup of frozen mixed veggies and Texas Toast buttered biscuits.

A Nice Slow-Cooked Pork

Good, I have made it several times. The sherry was a bit to overpowering for my family's taste, I used chicken broth instead and then used the leftovers for pulled pork BBQ the nest day.

Easy Breaded Shrimp

Simple, fast and tasty...my three favorite words. I live in Lower Alabama. Anything involving shrimp (any seafood for that matter) is a must. I made the best ever buffalo sauce along with the shrimp and had one heck of a po'boy

Meatloaf Cordon Bleu

Interesting flavor, but not to my taste. The ham next to the beef tasted a bit odd. The outside of the meatloaf was crusty and crunchy, which is not my thing either. My hubby picked this recipes so I gave it a shot. He liked it. I didn't.

I had never had Puerto Rican food before, and this was a perfect experience for me. I do, however, agree that it was salty. My Puerto Rican mother-in-law raved over it. I made it in my crock pot, as she suggested and the meat was simply falling apart tender. Will make it again and again.

Slow Cooker Oatmeal

I probably did this wrong though I followed the recipe exactly, because I ended up with a load of crusty...stuff stuck to the side of my slow cooker and mass of gelatinous goop under it all. I may try it again, but not for eight hours.

Chicken Pot Pie IV

I had this recipe for a while before I made it. I am not a big fan of pot pies, then I had only had the frozen premade kind. I used frozen broccoli, sweetcorn and peas and carrots as well as a frozen pie crust. I seasoned the chicken with salt and pepper then used my George Foreman grill to cook it. It was excellent!

My hubby liked it because of the cheese. It was ok, even after the third time making it. Each time doing something different. This time I added 1/4 cup of sour cream as recommened. It was an improvement.

Mushroom Pork Chops

My Hubby loves Pork Chops but they aren't my favorite and I used to make a recipe very close to this, but ths is far superior. I look forward to Pork Chops when this is the meal.

Tender Italian Baked Chicken

I thought this was really good and moist. I marinated the chicken in italian salad dressing for several hours and made to recipe. The chicken was tender and flavorful, breading was crispy.

Korean BBQ Beef (Pul-Kogi)

I lived in Korea for a year and since returning to the United States my Hubby and I have been looking for authentic tasting Korean food. I found his favorite in this recipe. I used a fuji apple instead of a pear (didn't have one) and fo a brief moment we were both back in Tongduchon, South Korea. Thanks so much.
