Red Chard and Caramelized Onions

To think that my husband said he didn't like chard! Stinker liked it so much I don't have any leftovers for lunch tomorrow! Great recipe!

Dumplings

Needed the dumplings to go with my red cabbage...German night! I threw them in a pot of boiling vegetable broth with salt and pepper. They were perfect! Easy, easy, easy!!!

Hot and Sour Cabbage Soup

How great on a cold, cold night! This vegetarian left out the pork and used vegetable broth. I served the cayenne pepper on the side because of some young tongues at the table. Yummy!!

So I didn't have an onion and used a green onion, didn't have cornstarch and used flour, don't use chicken anything so I eliminated bouillon...needless to say it was awesome. I used it on top of horseradish mashed potatoes.

Roasted Red Bell Pepper Soup

Made the soup for dinner tonight and used several pieces advice from others...added some more garlic, pepper, and oregano. I also followed the directions someone else gave of halving and seeding the peppers prior to roasting. This eliminated the need for flipping and turning the peppers. Husband loved it also!

Pesto Sauce

Straight forward pesto recipe! I've used this recipe MANY times and it always changes depending on what nuts I have in the cabinet. Today I only had about 6 walnuts(!) and had to substitute pumpkin seeds. Kinda cool and different. Delicious as a bread/bagel spread, on pasta or in my case sometimes right out of the blender with a spoon and/or finger!

Tortilla Sundae With Minted Mango Salsa

Some of the nine year olds in my class made this recipe and it was a hit with the all the kids. We used the suggestion to fry the tortillas in a deep fryer while holding them down with a ladle. It created a nice sundae bowl. The kids didn't peel the mango so that was a little weird but user error not the recipe. Yummy!!
