Westrup Whole Wheat Bread

Reviewed: Mar. 16, 2008
This was my best success yet! I didn't have any wheat bran, so substituted bran flakes cereal (no raisins). It worked just fine. I still feel like this bread lacks just a little bit of flavor, perhaps depth would be more accurate. I like to experience bread, not just eat it. All in all, a great recipe though.

Cashew Rice Pilaf

Reviewed: Aug. 8, 2007
I gave this 5 stars because I was able to "play" with it a little. I decided to try and make it in my rice cooker instead of a dutch oven. I was also missing several of the ingredients, but even with subs. it came out great. First, I sauteed the onion, then added 3 spoons of chicken base to the onion and 1 cup of water, cashews and simmered. I put 3 c. rice in my cooker, added the onion/water and then added two more cups of water. Didn't have raisins, and had to sub a bag of frozen peas and carrots, didn't have onion salt so omitted that. Threw everything but the green onions in the rice cooker and pushed the start button. In no time I had a lovely steamed rice pilaf, added gr. onion just prior to serving as recipe suggested. This was a great addition to my meal of BBQ chicken, marinated tomatoes, baked beans, corn on cob... super summer meal addition!!

Cool Watermelon Slushes

Reviewed: Jul. 16, 2007
After reading other reviews, I made a change or two and LOVED the result. I added 1 cup Sugar Free Strawberry Lemonade that was sitting in the fridge, and plopped in 4-5 frozen strawberries. I didn't add but a few ice cubes because I really don't like thick beverages, so this is more like a pulpy punch. This is a good recipe for leftover watermelon that is sitting in the fridge!!

Spicy African Yam Soup

Reviewed: Mar. 8, 2007
This soup was great!!! I realized (after I started cooking) that I didn't have salsa or garbanzo beans...so I sub'd a can of Italian stewed tomatoes diced, and a can of blackeyed peas. I was worried that the Italian flavor would wreck the recipe, but added enough red pepper flakes to cover up the oregano from the canned tomatoes. IT WORKED!! I also cut the peanut butter in half just in case the italian flavors wouldn't mix well with the peanut flavor. Moral of the story... don't be afraid to substitute, this soup isn't picky.

Holiday Chicken Salad

Reviewed: Aug. 2, 2006
This is NYC bistro quality!! I could make money on this stuff. I did make two changes, as suggested before. I did NOT use any paprika, the color doesn't look appetizing. I did NOT use the seasoning salt, but opted for a few shakes of Old Bay Seasoning. I used toasted pecans, which give it a nice snap! I didn't add the other fruits that people suggested, because a fruit salad was being served and didn't want to overdo the fruit. YOU WILL LOVE THIS RECIPE!!

Garlic and Ham Spaghetti

Reviewed: Jul. 26, 2006
Very tasty! SO much better than some ham casserole with cream of whatever soup. My husband thought it felt healthy, which is unusual for a dish with ham in it. I didn't have fresh mushrooms, so used canned. I also had a ton more ham than necessary, so added more pasta to compensate. I used 2 pkgs. whole wheat pasta. The olive oil was necessary because of the added pasta. I used 5 cloves of garlic, but will use more next time. I think this could also be good with some added pesto sauce for flare. Thanks for sharing this great combination of ingredients that I would have never thought of, but will now make on a regular basis!!

Kickin' Collard Greens

Reviewed: Jul. 26, 2006
Scrumptious recipe!!I had never made greens before, but have tasted them out of a can.(Mixed greens) I wasn't sure how much to buy, so I bought two bunches of greens, mustard and collards. I did as suggested and chopped the bacon before frying, it was so quick and neat. I used less broth as well as suggested. I'LL NEVER GO BACK TO CANNED! My kids ate this heartily, we nearly finished the whole pot between the five of us!

Honey-Lime Fruit Toss

Reviewed: Dec. 5, 2005
This is also great with papaya, banana, mandarin oranges, thin sliced granny smith apples, and blueberries. I made a yogurt dip by mixing instant vanilla pudding into plain yogurt and thinning it with milk. Top with toasted coconut.

Pumpkin Pancakes

Reviewed: Dec. 5, 2005
This is a great recipe, made it for overnight guests. I didn't have allspice, so doubled the cinnamon. Thinned it out with milk too. For a great syrup that compliments this better than maple... Butter Sauce--1 c. evaporated milk, 1 c. margarine, 2 c. sugar, 1 tsp. vanilla. Heat in saucepan, do not boil. Rave reviews! Top with toasted pecans.

Limeade

Reviewed: Mar. 29, 2005
I did as someone else mentioned and used less water. To make a gallon, use 1 c. lime juice, 1 c. sugar and 1 gallon water. Could add cherry juice or Koolaid to add another flavor.

Cassandra's Yummy Lamb Chops

Reviewed: Feb. 24, 2005
My husband brought home lamb chops..hmmm. Had tried ground lamb and didn't really care for it, so I hoped that by using a good recipe we'd enjoy chops. No such luck! It was pretty nasty, as they were greasy, tough and very fatty. On the positive, the seasoning was good, perhaps beef would be better. The kids put on a brave face as we laughed thru dinner (while baa-ing), but we ended up feeding them to the dog.

Ginger Glazed Mahi Mahi

Reviewed: Dec. 27, 2004
This was FABULOUS! We chose to grill, rather than fry or bake. Should be marinated for 2 hours. Make a double recipe of the marinade, one to marinade and one to brush on during grilling. USE FRESH GINGER AND GARLIC!! Wow your friends with this recipe!
