Marrakesh Vegetable Curry

Wow! I made this for my husband because he issued me a challenge, I didn't think I would like it. It was AMAZING! Made exactly as described except approximately doubled the spices (eyeballed it). Served over couscous with a Cucumber Gimlet drink. Perfect!

Avocado Egg Salad

I used 6 eggs but only 1 avocado as my others weren't quite ripe enough yet. Chopped B&B pickles. I left out the mayo completely because it seemed creamy enough without it, and I completely forgot to add mustard. Still very very good! I'll definitely be making this for lunches again soon.

Toddler Muffins

Awesome recipe! My son is a very picker eater (3 y.o) but has been requesting muffins lately. I made the recipe almost exact except I didn't have oat bran so I used instead 1/4 cup of oatmeal and 1/4 ground flaxseed. Absolutely delicious. I plan on making a huge batch to keep in the freezer.

Vegetarian Nut Loaf

I was really impressed with this dish! I had no idea what to expect. I ended up using only 2 cups of bread crumbs, but 7 eggs to get the right consistency. Served it with roasted potatoes and asparagus.

Make Ahead Lunch Wraps

So good! I made 12 of these up and froze them. Reheated one today for lunch by defrosting in the microwave for 6 minutes and then heating for 1 minute. So tasty and healthy! I added some carmelized onion to mine and it really enhanced the flavor. Turns out I forgot to put cheese in a few of the wraps, I would never miss it. I'm going to be keeping a constant stash of these in my deep freezer.

Watermelon and Tomato Salad

Really delicious! I thought it sounded great as soon as I read the ingredients; I was actually searching for a recipe that used watermelon and basil together. I could have left out the tomatoes altogether; I don't really think they brought much to the party. I also added a bit of sea salt and black pepper. A new summer fave!

Jambalaya

Very good and very spicy! I wanted to make Jambalaya for my husband who is originally from Louisiana, we both loved it but he says there are no tomatoes in the jambalaya he grew up eating. I say who cares, it was yummy.

Sonoran Tilapia

Delish! I rated it 4 stars instead of 5 because it was too salty. Don't add extra salt if using a creole seasoning like Tony Chacheres. Otherwise it was absolutely delicious! I served the fish on top of Santa Fe rice with creamed spinach on the side. Had alot of extra sauce left over.

Zucchini Quiche

Tasted pretty good, it turned out to be much more of a cornbread than a quiche in my opinion. It wasn't as eggy as I typically think of quiche. Made this version because I had no pie crusts, but I think I'll stick with the pie crust versions.

Asian Lettuce Wraps

Delicious! Of course I added my own spin on the recipe just like I do everything else. I added a bag of broccoli slaw to the beef mixture to have some extra veggies. I also added ponzu sauce and sweet thai chili sauce to the mix. I never measure my spices so I'm sure I added much more than the recipe called for. I also topped the mixture with crunchy chow mein noodles. It was perfect! Can't wait to make it again. I have a feeling this is going to become a regular craving. I might try it with cabbage leaves next time to do something different. Other meats might be good as well. This is definitely a recipe you can change to suit your taste.

Pumpkin Black Bean Soup

Love it! I added alot more pumpkin than the recipe called for (used fresh pumpkins which were roasted and pureed). I also added alot of spices: cumin, chili powder, garlic. Don't forget the vinegar, its just not quite right without it. Topped with cilantro and sour cream. Served with cornbread. Delish!

Pumpkin Cake II

Delicious! The only things I changed were that I used Spice Cake mix instead of yellow cake. I didn't have to add the extra cinnamon and I added only about 1/2 cup of sugar. I used a whole can of pumpkin. It was very moist and delicious.

Spinach Enchiladas

I made a few changes to suit my own taste and to make the dish a little healthier. I couldn't be more pleased with how it turned out! I made the spinach mixture with: sauteed red onions, garlic, chopped mushrooms, and spinach. I added some extra spices such as red pepper flake, salt, black pepper and garlic powder. I also used cottage cheese instead of ricotta cheese to cut down on the fat. I will definitely be making this again and again!

Portobello Mushroom Burgers

Amazing! We topped our "burgers" with avocado, arugula, and grilled onions. This was the first mushroom burger I've ever had, and it was absolutely delicious. With vegetarian meals this good, who needs meat?!

Italian Summer Squash Polenta Bake

Really awesome! I used the veggies I had on hand (carrots, squash, zucchini, yellow onion, spinach). Didn't bother browning the polenta in oil before cooking. The flavors were amazing!

Southern Fried Cabbage

Very good! I made it without the bacon as I am a vegetarian, and it was still awesome. I was curious what the sugar would bring to the dish, but it turned out perfect. I wouldn't change a thing.
