Marrakesh Vegetable Curry
Wow! I made this for my husband because he issued me a challenge, I didn't think I would like it. It was AMAZING! Made exactly as described except approximately doubled the spices (eyeballed it). Served over couscous with a Cucumber Gimlet drink. Perfect!

Avocado Egg Salad
I used 6 eggs but only 1 avocado as my others weren't quite ripe enough yet. Chopped B&B pickles. I left out the mayo completely because it seemed creamy enough without it, and I completely forgot to add mustard. Still very very good! I'll definitely be making this for lunches again soon.

Toddler Muffins
Awesome recipe! My son is a very picker eater (3 y.o) but has been requesting muffins lately. I made the recipe almost exact except I didn't have oat bran so I used instead 1/4 cup of oatmeal and 1/4 ground flaxseed. Absolutely delicious. I plan on making a huge batch to keep in the freezer.
