Hawaiian Dessert

I made this recipe as written for my Gourmet groups Hawaiian luncheon. It was a perfect ending to our meal, light not overly sweet and everyone liked it. I was a little worried about the toasted coconut on top but everyone agreed, even those who do not like coconut that it added just a little extra crunch and tasted good. I made the cake and filling the night before and stored in fridge. I used 2 Pyrex portables 13 by 9 pans that have the plastic covers so they could be stacked on top of each other. I made the whipped cream the next morning and spread it on the cakes. It really makes the dessert special and I would not use a substitute. Great recipe to feed 24 people with not a lot of work and good on the budget! Thanks Eunice!

Banana Sour Cream Bread

This recipe makes alot of batter! I maxed out my stand mixer bowl before adding dry ingredients, had to switch to a larger bowl. The banana bread was very good, moist but not soggy and the cinnamon was just the right touch! My husband took some to work and everyone liked it. I just took my last loaf out of the freezer and it does freeze well. I have six bananas ripening right now so I can make another batch to take to book club in a couple weeks. I have always used my grandmas recipe but this is so much better!

Luscious Slush Punch

I decreased sugar to 1 2/3 cups, used 30 oz. pineapple juice (5- 6 oz. cans)and increased lemon juice to 1 cup and used wild strawberry jello as previously suggested. Great but not too sweet and pineapple did not overpower other flavors. Received many requests for recipe.

Butterscotch Brownies I

Great recipe! It is easy to make with ingredients usually on hand. They even cut well and stay looking nice for cookie platters.

Applesauce Squares

This recipe has some mysteries. One egg is listed in ingredients but in instruction it says eggs (plural) I used 1 and it was crumbly so maybe 2? Also this is a cookie recipe? It calls for a 8 inch sq. pan and baking time took 50 minutes instead of thirty. Maybe it was supposed to be a 9x 13 pan for cookie squares and not cake squares. Probably will not make again. Flavor is okay but needs whipped cream or frosting of some kind.

Luby's German Chocolate Pie

There was no chocolate flavor at all. The recipe called for 2 teaspoons of cocoa, maybe it was supposed to be more. I have had this pie before at a restaurant and this tasted nothing like it. What a disappointment and waste of ingredients!

Bacon and Tomato Cups

I made these for a Women's Club Coffee yesterday and they were gone very qickly. I followed the suggestions and used Hungry Jack bisquits, but divided them in thirds, rolled into balls, then rolled out before placing in tins. I made no adjustments in the filling and ended up with 24. I also substituted 1/2 Tablespoon instant minced onion. I will definitely make these again!

Flip-Flop Cobbler

I made this recipe with fresh peaches. I put the 1/2 cup sugar on the peaches and set it aside for 30 minutes. Then I drained the juice off and used it in the recipe. Very good with vanilla ice cream! Leftovers heated in microwave the next day were even better!
