Pumpkin Bread I

This bread has great flavor and moistness for using applesauce instead of oil. I used two 9x5 pans instead of 3 smaller pans. It's a keeper in our house for a lower fat treat!

Oven Fried Chicken IV

This was good. I was a little short on corn flake crumbs so mixed in some panko bread crumbs too. It definitely has a strong sour cream taste so if you don't like sour cream, this isn't the recipe for you. I mixed the herbs in with the sour cream as others suggested. Nice crunchy coating--hubby ate all the leftovers in record time (and he doesn't like leftovers).

Sweet and Tangy Slow Cooker Bar-B-Q Pork

This recipe is a regular in our dinner rotation. I'm not a big fan of pork but really like it in this recipe. I usually leave out the onions and peppers and love the way the flavors of the sauce get infused into the ribs.

Tangy BBQ Ribs

These were great! Had my neighbors (formally from the South where they know good BBQ) over for dinner and they raved about these. I used boneless country ribs, grilled as directed then baked at 300 degrees for 1 hour. Added sauce and baked for 45 more minutes. They were done after the first hour so I think next time I will short the time even more. Oh, and the sauce is tasty and so easy to make. I'll use it for chicken too.

Sugar Coated Pecans

I made these two days in advance of a party and had trouble keeping my hands off them before the party! This recipe is so good and really easy. I doubled the amount of cinnamon with good results.

To Die For Blueberry Muffins

I already reviewed this recipe giving it 5 stars before but wanted to add an update with some variation I tried to make them a little lighter and healthier. I subbed a 1/2 cup of whole wheat flour for the white and only used 2 T of oil (the rest applesauce) and cut the topping sugar, flour and cinnamon in half, and using only a tablespoon of butter. They still came out moist and yummy! Hubby says I can make these ANY time I want.

Artichoke Spinach Dip

I took the advice of others and halved the sour cream and cream cheese for this recipe. I also used light versions of both those ingredients. I also used 2 small fresh garlic cloves (chopped) instead of the garlic salt. It turned out fabulous! All my guests said it tasted just as good as the restaurant versions. Definitely a keeper!

Goulash Supreme

Just like I remember my mom making when I was young. This is total comfort food! I cooked the macaroni al dente first and used canned diced tomatoes instead of stewed for a chunkier texture.

Thank you Jo for a wonderful and easy recipe!! My husband raved about this bread and told me I could make it every week. The flavor and texture were super as is. I only wish it made a slightly larger loaf so it didn't disappear so quickly!

Spaghetti With Marinara Sauce

I will never buy jarred sauce again! This marinara was so easy to make and tasted so fresh. I made some substitutions to the original recipe to make the flavors pop even more: 4 fresh chopped garlic cloves, 2 T. chopped fresh basil and roma tomatoes in place of the diced canned tomatoes. My husband said it was every bit as good as good Italian restaurant sauce. Thanks for the great recipe!

Tangy Slow Cooker Pork Roast

This dish will definitely go in our dinner rotation--my husband loved it. I thought the sauce was too thin though. I ended up pouring most of it into a pan at the end and adding cornstarch to thicken, then spooned over the pork when I served it. Maybe next time I'll cut back on the water.

Whipped Sweet Potato Casserole

I doubled this recipe and served it at Thanksgiving and it was a great substitute for the standard candied yams. I altered the recipe to suit my diabetic father-in-law by omitting the marshmallows, replacing most of the brown sugar with Splenda, and adding a dash of orange zest. The flavor of the sweet potato was really prevalent and the touch of orange made it so much more interesting.

Carrot Cake III

2000+ rave reviews couldn't be wrong, right? TRUE! This is the best carrot cake I've ever made. I did as others suggested and added a can of crushed pineapple and split the sugar into half white and half brown. Also I made two 9-inch rounds, doubled the icing and made a two-layer cake topped with some toasted coconut. Everyone couldn't believe it was not a fancy bakery cake. Worth the effort to make from scratch for sure!

Lentil Soup

This was okay. Mine did not have much flavor despite all the herbs and garlic. And the lentils were still not totally soft after cooking for almost an hour and a half. Sorry, I don't think we'll make this again.

Mom's Zucchini Bread

This bread has a really good flavor! I substituted applesauce for half the oil and cut the sugar back to two cups and it was still moist and sweet. My loaves also took 60 minutes to bake completely. Thanks for a great recipe to use up all my garden zucchini!

Slow-Cooker Chicken Tortilla Soup

This was fantastic! I also threw in raw chicken breasts and shredded later and added a can of black beans. I like my soup thicker so I left out one cup of water and substituted chicken broth for the other cup. Hubby said he could eat this every week. It had tons of great flavor and it was so easy to make!

Layered Chicken and Black Bean Enchilada Casserole

This was really tasty and so easy to make. I only had canned diced jalapeno peppers instead of green chiles so I used about a third of a 4 oz. can and it provided plenty of kick! I also mixed the sour cream in with the chicken mixture as others suggested. Next time I might add in black olives. Thanks for the recipe--it hits the spot when craving something Mexican.
