Salsa Steak For One

Reviewed: Jan. 6, 2008
This was great. I doubled the recipe. Instead of onions, I used the white part of the leek and didn't use any carrots. I also used a spicy salsa.

Buttery Cooked Carrots

Reviewed: Mar. 17, 2007
Running short of time, I used canned carrots instead of fresh, adding them at the end to warm them up since they are already cooked. I don't use margarine so I used butter instead. Carrots came out very good tasting.

Ginger Salmon

Reviewed: Mar. 17, 2007
Excellent! I tried this recipe for the first time tonight. My husband just loves it! It makes a change from “lemon-pepper” salmon. I added a teaspoon of finely minced shallot to the sauce. This is the first time I've ever use the ugly little root that I have in my freezer.

Quick Polynesian Chicken

Reviewed: Jan. 28, 2007
I didn't have fruit cocktail so I substituted canned sliced peaches instead. It came out delicious. Spray cooking pan before adding chicken so it won't stick.

Turkey Enchiladas

Reviewed: Nov. 28, 2006
Having never made enchiladas before I was a little scared. I used all of the ingredients plus added green chilies and salsa verde. While adding the filling to the tortillas, I drizzled a little enchilada sauce in it, then folded enchilada and placed in baking dish. I also used a combination of montery jack and sharp cheddar cheese to top it with. My husband who doesn't like "Mexican" food just loved it.
