Applesauce Noodle Kugel

I have never liked noodle puddings, but a favor to my mother inspired me to try this recipe - success! She called it the "best kugel I have ever had in my entire life." I still don't like most kugels, but this has become one of my favorite year-round dishes. I use only 1 C sugar, 8 oz of chunky applesauce, soaked sultanas (golden raisins), and no graham crackers crumbs. It is far less sweet and creamy than most kugels this way, and it really emphasises the appley-cinnamon flavour.

Seven Layer Bars

I'm not very good at baking, so I made these for a cookie swap at Christmas - where they became known as my "Death By Diabetes bars", and were a huge hit! As per the suggestions, I added the condensed milk after the coconut (which helped the coconut become an integrated part of the bars' crunchiness), and then topped with more sprinkled coconut for aextra flavor. I also cut them into rather small squares ("bite-size"), so people weren't overwhelmed by the sweetness.

Jumbo Fluffy Walnut Apple Muffins

Fantastic! I'm really picky when it comes to muffins, and I'm not a very good baker - but these came out wonderfully flavorful and moist, and everybody at work loved them. I left out the cinnamon topping, used only 1 cup of white sugar, and 1/4 c margarine + 1/4 c butter.

Grilled Salmon I

This is an excellent salmon marinade! I've made similar marinades before (using maple syrup vs brown sugar) for baking salmon, but somehow this was the best I've ever tasted - perhaps because this was grilled! I followed the advice of 1 T oil and substituted lemon juice and fresh minced garlic for the powders, and marinated in the fridge for 30 hrs. Against all odds (never before grilled fish, and very finicky about salmon), the fillets stayed intact and came out delicious - even better chilled the next day for salads!

Dark Chocolate Cake I

I made this cake for my mom's birthday using vegan butter substitute (and a simple vegan chocolate frosting), and it was *phenomenal*! I think the coffee was an excellent substitution for the hot water, and created a level of flavor that had my mom wondering if I'd spiked the batter with liqueur(!). I also ended up using a very high quality cocoa powder, which may have helped, and used 2/3 of the recipe to create a 2-layer cake with berry-frosting in the middle that seeped into the cake and made it absolutely decadent. I love how Allrecipes has my family convinced I'm a baking pro!

Chewy Chocolate Chip Oatmeal Cookies

These cookies are THE BEST, and have been my go-to recipe for years - the oatmeal makes them hearty and not too sweet, and yet people can't stop snacking on them! As everyone mentions, adjusting the recipe helps make light, rising cookies: increase to 1.75 C flour and 1 t baking soda, reduce to 1/2 t salt, don't overmix. I also add 1/2 t cinnamon - gives it an extra intrigue. Now if only I could find a way to reduce all the butter and have them be just as good!
