Grilled Asparagus with Orange Wasabi Dressing

Reviewed: Jun. 24, 2006
This recipe was really good with some minor changes. I increased the recipe by half and included whole white mushrooms with the asparagus, then grilled. I used honey instead of sugar, I used jarred ginger instead of powder and added about 1 tsp of orange zest. The only thing I will do different the next time I make this is increase the orange zest, as I didn't taste as much orange as I would have liked. Thanks for posting!

Barbeque Halibut Steaks

Reviewed: Jun. 24, 2006
This was so YUMMY!! I used 1.5 lbs of snapper, so adjusted the ratio of ingredients accordingly. I made a couple of changes, used sesame oil instead of butter, used lime juice instead of lemon (it's what I had on hand) and added 1 tsp of sesame seeds and 1 dried tobasco pepper (from our garden). The dried pepper would probably equal about 1/2 tsp of red pepper flake. As others suggested, I also made a 2nd batch of sauce, cooked on the stove top until it was a nice glaxze and drizzeled on the top of the fish after it was plated. This was SOOO YUMMY! My family was licking their plates (literally) and asking if there was more. Thanks so much for sharing this recipe!

Mango Salsa Salmon

Reviewed: Jun. 7, 2006
I would give this recipe 5 starts, except that I used the salsa recipe with bone-in pork chops instead of salmon. I seasoned the chops with salt, pepper and cumin, then broiled 2" from heat for 6 minutes per side. For the salsa I used a vidalia onion instead of red onion and added 1 seeded and chopped jalepeno pepper. Otherwise I followed the directions as written. This was delicious! We enjoyed our chops with some sauteed spinach with onion and garlic. We ate up the rest of the salsa with some organic blue corn chips. This is a keeper!

Kickin' Collard Greens

Reviewed: Mar. 26, 2006
The title says it all! These collard's are kickin'! The only change we made was to chop & add 3 or 4 of our homegrown tabasco peppers when we added the garlic. They were so good that my honey was drinking the juice out of the pan after all the greens were gone! Thanks so much for a quick and easy way to make GREAT collards!

Sesame Lime Steak Wraps

Reviewed: Feb. 23, 2006
I've not actually made this exact recipe, so I can't rate it a full five stars. I make this recipe generally as written, except that I use a lb of shrimp instead of beef and serve it over jasmine rice. I also chop up about 3 dried tabasco peppers (about 1 Tbs red peper flakes) for a bit of a kick. My family likes spicy. Instead of boiling down, I combine 1 Tbs cornstarch and 1 Tbs water and mix in with the sauce to thicken before adding the shrimp back in. This is a recipe I've made a couple of times now, and there are never any leftovers. Delicious!

Easy Chicken in Wine Sauce

Reviewed: Feb. 9, 2006
My family really enjoyed this recipe. I used organic canned diced tomatoes and sliced mushrooms in the wine sauce. I also served this over sauteed spinach with garlic and some mashed cauliflower. This is one to keep in the rotation. YUMMY!!

Roasted Pork Loin

Reviewed: Feb. 9, 2006
I used this recipe with a 2.75 lb bone-in pork rib roast. I adjusted the amount of garlic and rosemary to taste. I used fresh rosemary since I had some. At first I thought the wine sauce was bitter, but after dipping my meat about 3 times, I couldn't get enough. I served this with twice baked sweet potatoes and mashed cauliflower.

Asian Lettuce Wraps

Reviewed: Feb. 2, 2006
I had been looking for a great lettuce wrap recipe ever since I had them at a famous asian restaurant. These are it!! I made them with local shrimp and they were just divine. I need more practice with pulling the lettuce off in a whole leaf, but this recipe is good enough to keep trying!

Taco Soup IV

Reviewed: Feb. 2, 2006
This was quick, easy and yummy! Great for a busy weeknight meal. Topped with sour cream, shredded cheddar and sliced black olives. Had cantina chips for dipping. Could see adding shredded lettuce to the topping, just to add some greens. Will make again. Thanks!

Broiled Pork Chops

Reviewed: Feb. 2, 2006
This is a great BBQ sauce to use on pork, chicken, or whatever. The only change I made to the sauce was to add about 1.5 oz of bourbon and 1 beef boullion cube. I'll be using this sauce again and again. Thanks so much!

Chicken Stew With Coconut Milk

Reviewed: Feb. 2, 2006
This was FANTASTIC! Instead of microwaving I cooked this on the stovetop, but otherwise followed the recipe exactly. It was soo yummy. I served in soup caraffes over basmati rice and I couldn't get enough. 2 bowls for dinner, and more re-heated the next day for lunch. This is a recipe that I will be making again and again (during the cold months, of course). Thanks so much!!

Garlic and Rosemary Shrimp

Reviewed: Nov. 25, 2005
My family really enjoyed this recipe! As another suggested, we also put it over bowtie pasta. I used dried tabasco peppers from my garden instead of the red chile peppers. It was just wonderful. Next time I make it, I will mince the garlic, as the whole garlic cloves did not give as much flavor as hoped. Otherwise though, just fabulous! Thanks so much, this goes into the normal rotation.

Greek Chicken Pitas

Reviewed: Nov. 12, 2005
The flavors of this recipe are a good base, but the chicken turned out very dry after cooking in the crock pot all day. The next time, I will marinate in the onion and spices all day and cook stove-top. Also, salt, garlic and fresh ground pepper are a definite must for the cucumber sauce. We will make again with these adjustments.

My Crab Cakes

Reviewed: Nov. 12, 2005
I didn't use the full amount of crackers, but this recipe had too much breading for our taste. I served these with a jalapeno-wasabi sauce (from this site) and the taste was generally good, but again, too much breading.

Balsamic Chicken and Fresh Mozzarella

Reviewed: Aug. 31, 2005
My family LOVES this recipe. It is so easy to make, and tastes so fresh and "alive". This recipe has become part of my regular repertoire. 10/09,2006: Update: I used the basis of this recipe with some fresh tilapia (white fish) and it was fabulous. I marinated the fish in the balsamic vinegrette for about 45 minutes. I lined a jelly roll pan with aluminum foil, and placed the fish on the foil. I then covered the fish with shredded mozzarella and baked in a 425 F oven for 10 minutes, then broiled for 2-3 minutes until the cheese was golden and bubbly. To make the remainder ingredients easier to eat with fish, I chopped the basil and diced the tomatoes before layering them on the top of each fish fillet. Finally, I sprinkled with additional balsamic vinegar and served. YUM YUM!!! Thanks again, this is one we make all the time!

Fresh Tomato Shrimp Pasta

Reviewed: Aug. 23, 2005
My family and I really enjoyed this dish. I did double the spinach as had been mentioned here. I also blackened my shrimp prior and added them at the same time that I added the tomato/spinach mixture to the fettuccini. It was delicious! I will definitely be making agian.

Pork Chops with Raspberry Sauce

Reviewed: May 4, 2005
This recipe was very easy and very delicious. I doubled the amount of herbs I rubbed on the outside of the pork chops as well as the amount of rasberry sauce because my family always prefers a little extra sauce and seasoning. We usually try something different each week so that dinner is not boring, some we "add to the list" and some we don't. This is one we have definitly added to the list.
