Buttermilk Scones

The scones came out of the oven "just right" for my tastes; if you like a firmer scone, decrease the buttermilk to 1 cup. I baked mine on a pizza stone (no parchment paper or greasing needed!). I followed others' recommendations and did the following: added 1 tsp white sugar and changed the baking powder to 2 tsp. I also added 1/3 c dried cranberries and about 1/2 c white chocolate chips. The scones baked up so large that I'd recommend making the scones half the size (so, make at least 16 scones from this recipe).

Ricotta Eggplant Rolls

Very tasty! I followed the advice of another poster and made this into a layers like lasagna instead of rolling up the eggplant. I also added a can of roasted red peppers since I had that laying around. Also, I used 6 cloves of garlic instead of the amount in the recipe. I'd definitely make it again, but try and lighten the fat by omitting the oil used for frying the eggplant and baking the eggplant instead after spraying it with some PAM. My husband hates eating vegetarian meals but loved this one!

Biggest Bestest Burger

These were great! They had just enough flavor to keep them from being too bland or too overpowered. I would suggest substituting some onion powder for the chooped onion (dice your onions, don't just chop them, or your burger will fall apart more easily). These would be great with some sauteed mushrooms!
