Kofta Kebabs

Had my first chance to grill outdoors this 80 degree spring day in May. My wife wanted burgers, but the warm air brought back memories of a trip I took to Israel. My regular american diet became much broader with the addition of many of the Middle Eastern dishes I experienced while there. I was invited to a cookout at an Arab families home, but there were no burgers, hot dogs, or ribs on the grill but lots of Kebabs! This recipe turned out some delicious, savory meat kebabs like the ones I ate there. If you have none of the ingredients you could end up spending 40 or 50 dollars for this meal. I had most spices. I only lacked coriander & allspice. The allspice was 3.00 and coriander was 7.00, add 8.00 for the lamb and a buck for some fresh parsley. I actually saved some money by not buying the coriander but found a spice blend that closely matched the recipe for $3.98,(Ras El Hanout). Not only did my wife and I eat our fill, with salad and rice on the side, I shared a half dozen kebabs with my neighbor. I have no aversion to lamb being of Scottish heritage on my father's side, but the piece of lamb I bought was just over 3/4 of a lb. so I added a half lb of ground chuck to stretch it. My wife also wanted some grilled pineapple which I added to a few of the kebabs. The picture is of the leftovers I reheated on the grill. A note on the kebabs I had in Israel: The kababs were formed around a metal skewer in a sausage shape and then removed from the skewer to grill them.
