Brunch Enchiladas

This was very good... I added some canned green chilis with the ham & onions; it could still use more zip! I think chorizo or a spicy sausage would be a great change instead of the ham. All in all, a good recipe and liked by all.

Enchilada Casserole III

I used canned enchilada sauce and black beans instead of the refried beans... I also used some taco seasoning when I cooked the ground beef to add more flavor. Definitely a keeper.

Coconut Banana Bread

Yummy! I LOVE coconut, so this was a great recipe for me. The only changes I made were I used coconut extract because I didn't have rum extract & I used white chocolate chips instead of chopping a block of chocolate. This recipe made five small loaves, enough to share with the neighbors. I just had a warm piece & it was wonderful!

Stuffed Pepper Soup II

This was really good. I doubled the recipe. Instead of 6 cups of water, I used 4 cups beef stock, an extra cup of tomato juice, and a 15 oz. can of tomato sauce. Per other reviews, I did not add the cinnamon, instead I added a tsp. of crushed red peppers for some zip... definitely a recipe to make again.

Stuffed Shells I

I made this for six women last night & they loved it! I used half ricotta & half cottage cheese - I blended all the ingredients in my food processor. As suggested, I used a ziplock bag to pipe the filling into the shells... could have used one more hand! Overall, very good recipe!

Prize Winning Baby Back Ribs

These were great.. I must admit I didn't do them on the grill: I did the rub, wrapped in tinfoil & put in the oven at 300 degrees for 3 hours - then put in a crockpot with BBQ sauce for another 2 hours. My friend the chef said they were some of the best ribs she's ever had! They fell right off the bone!

Overnight Apple Cinnamon French Toast

I didn't have canned pie filling, so sauteed some sliced apples in a bit of maple syrup & butter... I used raisin bread & added some chunks of cream cheese in one layer. Rave reviews!

Strawberry Spinach Salad II

Spring Salad

Very good... I've made a version of this salad many times -- the fresh grapes were a great addition. The only change I made was to use craisins instead of the raisins... got rave reviews and an empty bowl!

Green Salad with Cranberry Vinaigrette

This was great! The tangy blue cheese and the cranberry dressing were a tasty compliment to each other. I chopped dried cranberries in the food processor with the dressing, added 2 Tbsp. of sugar to sweeten it up a bit. I also sugared the almonds. I will definitely make this again and again!

Baked Potato Soup II

This was so easy....and ready in no time (I had left over baked potatoes in the 'frig). A couple of changes I made were: 1) I sauteed some chopped onions & bacon before making the roux. 2) I used one cup of half and half with the skim milk. 3) I didn't use sour cream. It was very tasty; will definitely make it again.
