Caramel Popcorn

Reviewed: Jan. 31, 2010
oh my goodness! LOVE this stuff! We popped our own popcorn on the stove and used 1/2 c butter instead of 1 c. I also took the suggestion of using a roasting pan and that worked great. Thanks for a wonderful new recipe!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Feb. 6, 2010
I halved the recipe, as it's just the hubs and I but as other suggested, I added a little extra flour and baking soda as my cookies generally turn out too flat. These were delicious and I could tell myself they were healthier since there was oatmeal and I used some wheat flour ;)

Baked Buffalo Wings

Reviewed: Feb. 8, 2010
SO good! We baked the wings before dipping them in the hot sauce mixture and this helped them to get crispier than the last time we tried this recipe. Also, we like ours a bit more spicy so I put 1 1/2 tsp Cayenne Pepper and used 1/4 c. butter with 1/2 c. hot sauce. Delicious!

A nice change from our normal hummus! I roasted a red pepper in the oven instead of from a jar and it turned out great!

Best Ever Banana Bread

Reviewed: Feb. 16, 2010
This banana bread was good.. not as much banana flavor as I prefer but still yummy. My favorite is still the Banana Banana Bread from this site but you need alot of bananas for it. I sub applesauce for the oil and half a cup Whole Wheat flour to make my banana breads a bit healthier. :)

Banana Banana Bread

Reviewed: Feb. 16, 2010
I love this bread! It's not often I have enough old bananas to make this but I love it when I do. :) I sub applesauce for butter and a 1/2 c. Wheat Flour to make it healthier and it tastes just as good! Also like to add cinnamon and chopped walnuts when we have them.

Black Bean and Rice Enchiladas

Reviewed: Mar. 17, 2010
SO good! Changes we made: 1 cup rice instead of two, one 8 oz. bag of shredded cheddar (half in enchilada/ half on top), subbed salsa for picante sauce in the filling and used enchilada sauce on bottom and top of enchiladas instead of salsa. We loved it! Will definitely make again soon.

I made exactly as stated except I took other reviewers' suggestions and put the brisket on the bottom vs. the top of the vegetable. The meat turned out so moist and flavorful!

We loved this.. I burnt the fish a bit so next time I might try baking it in the oven but the flavor was fabulous! Tasted like an entree from a great seafood restaurant. Will definitely make again!

Vegetarian Tortilla Soup

delicious! Per other reviews, we used fresh peppers and onions instead of frozen, diced tomatoes instead of crushed, frozen corn instead of canned, added a can of black beans and added a splash of lime and a dollop of sour cream to the toppings.. the combo of chips, soup, cheese, avocado and sour cream was amazing! a new favorite in our house!
