Tuna Pasta Salad with Dill

White Chili II

We used 2 jalapeños with seeds and it was really spicy, just as we like it! I omitted the sage and doubled the cumin..also added a couple dashes of chili powder and an extra cup of broth. Fabulous! Will make again soon.

Spicy Slow Cooker Black Bean Soup

Delicious! I added green pepper, onion and a can of diced tomatoes. Cooked 11 hours on low and it was perfect! Next time I will do a cup less broth as it wasn't as thick as we would have liked.

Baked Beef Stew

I browner the meat in flour & seasonings and subbed cornstarch/water for tapioca but otherwise followed recipe.. Meat was so tender and moist! Delicious!

Pumpkin Muffins II

These turned out very yummy w/ a few healthier alterations. I used 1/3 c. applesauce and 1/3 oil instead of all oil, added a cup of chopped walnuts and used 1 c. Whole wheat flour instead of 1 c. all-purpose. I also reduced spices by 1/2 except for the cinnamon. delicious!

Banana Oat Muffins

So yummy! I was looking for a healthier alternative for my hubby's sweet tooth and this it. I used 1 c. White and 1/2 c. Wheat flour, 1/2c. chopped walnuts and subbed applesauce for the oil. Hearty and delicious!

Light Oat Bread

I used two c. Bread flour and 1 c. Whole Wheat Flour and added some gluten to keep it moist longer. I also forgot to put in the oats (whoops) so our Oat Bread was oatless. Still super light and yummy! Will make again.

Easiest Peanut Butter Fudge

Per other reviews, I used 3 c. powdered sugar, 1 c. Peanut Butter and 2 c. loosely packed brown sugar. It turned out FABULOUS! Thanks for a great recipe!

Pecan Tarts

I doubled the recipe and used one 8oz block of Cream Cheese and did not do cherries on the top. I had just the right amount of filling for the number of tarts that the crust made, but I also filled them to the tippy top! Will definitely add to the Christmas cookie recipes, as my hubby wont stop raving about these. They also froze very well.

Mulligatawny Soup I

Great soup! Mine had a lot of broth, as I used pre-cooked brown rice and forgot to add less broth to compensate for what would normally be absorbed. I also used olive oil instead of butter and fat-free half n half instead of heavy cream to make it a bit healthier :) will definitely go in the recipebook. Thanks!

Buttermilk Cinnamon Bread

I had some leftover buttermilk to use up and this was a great breakfast bread to go with our morning coffee. I think next time I will add more cinnamon and sugar and maybe some butter to the filling for more flavor.

Pumpkin Cookies with Penuche Frosting

I am just reviewing the penuche, as I used a different cookie recipe. I added a tsp of maple extract and it was a wonderful compliment to the pumpkin cookies. I loved how well it drizzled over the cookies and hardened for a nice finish. Tasty too!
