Pumpkin Muffins II

These turned out very yummy w/ a few healthier alterations. I used 1/3 c. applesauce and 1/3 oil instead of all oil, added a cup of chopped walnuts and used 1 c. Whole wheat flour instead of 1 c. all-purpose. I also reduced spices by 1/2 except for the cinnamon. delicious!

Banana Oat Muffins

So yummy! I was looking for a healthier alternative for my hubby's sweet tooth and this it. I used 1 c. White and 1/2 c. Wheat flour, 1/2c. chopped walnuts and subbed applesauce for the oil. Hearty and delicious!

Light Oat Bread

I used two c. Bread flour and 1 c. Whole Wheat Flour and added some gluten to keep it moist longer. I also forgot to put in the oats (whoops) so our Oat Bread was oatless. Still super light and yummy! Will make again.

I used 2 c. Milk Chocolate chips and 1 c. Semi-sweet chocolate chips and added about a 1/2 c. extra walnuts. Beautiful and yummy!

Easiest Peanut Butter Fudge

Per other reviews, I used 3 c. powdered sugar, 1 c. Peanut Butter and 2 c. loosely packed brown sugar. It turned out FABULOUS! Thanks for a great recipe!

Pecan Tarts

I doubled the recipe and used one 8oz block of Cream Cheese and did not do cherries on the top. I had just the right amount of filling for the number of tarts that the crust made, but I also filled them to the tippy top! Will definitely add to the Christmas cookie recipes, as my hubby wont stop raving about these. They also froze very well.

Mulligatawny Soup I

Great soup! Mine had a lot of broth, as I used pre-cooked brown rice and forgot to add less broth to compensate for what would normally be absorbed. I also used olive oil instead of butter and fat-free half n half instead of heavy cream to make it a bit healthier :) will definitely go in the recipebook. Thanks!

Buttermilk Cinnamon Bread

I had some leftover buttermilk to use up and this was a great breakfast bread to go with our morning coffee. I think next time I will add more cinnamon and sugar and maybe some butter to the filling for more flavor.

Pumpkin Cookies with Penuche Frosting

I am just reviewing the penuche, as I used a different cookie recipe. I added a tsp of maple extract and it was a wonderful compliment to the pumpkin cookies. I loved how well it drizzled over the cookies and hardened for a nice finish. Tasty too!

Proper English Cottage Pie

SO good.. I halved the recipe (just for the hubby and I) and used a bread pan instead of a pie plate. The only things I changed were using my normal mashed potato recipe, boiling the carrots before adding to the beef mixture, and adding some frozen peas. I also only put a couple dashes of cinnamon and it complimented the dish nicely.

Bread Machine Pizza Dough

Banana Cake VI

So good! The only change I made to the recipe was to add about 3/4 c. extra of bananas and a bit of cinnamon! I also made them as cupcakes to shorten the baking time.. about 35 minutes. Made about 28 cupcakes! My husband loved them... will make again soon! :)

Amazingly good! I didn't have OJ so I added a 6oz container of Strawberry yogurt and a 1/2 c. Berry juice. My bananas weren't frozen so I also added 1 c. ice. Will definitely make again!!

Whole Wheat Pumpkin-Applesauce Muffins

I had a a partial can of pumpkin leftover and thought I'd try these.. they turned out great! I didn't have pumpkin pie spice so I threw in cinnamon, nutmeg, ginger and nutmeg. I also used a little more than 1/2 c. pumpkin and sprinkled the top with a brown sugar/flour/butter mixture. SO yummy! Will definitely make again.
