Pickled Eggs I

Flavorless. Needs more vinegar. Suggest red wine vinegar double recipe quantity and subtract the wine from the recipe. Forget the pickling spice, it matters not. Don't chop onion either: slice it for better looks. Havn't tried my own suggestions, but it has got to be better.

Kerry's Beany Salad

The recipe makes at least 12 SERVINGS at 1/2 cup. Otherwise, a truly exceptional salad in taste and texture. I prefer to heat the olive oil up to about 200 degree or so and add the garlic and red pepper flakes to it. This technique always adds extra zip to oil soluable flavors in these spices. I also took the advice of those who suggested more vinegar and less oil.

Bearnaise Sauce II

The steam method worked perfectly. There was a slight fishy overtone when I removed it from the heat but it may have been the freeze dried tarragon. Not sure. But the recipe works and is very good.

Marian's Creamed Corn

Delicious. I took the advice of those recommending less sugar and cream cheese and I added a little heavy cream. However, there is no binder (flour or corn starch) in the cream sauce. My sauce seperated from the butter. Not the prettiest.

Company Couscous

It turned out good, however the recipe does not say to cook covered or uncovered. I cooked mine covered. Next time, also, I'll chop the basil leaves. Needed salt and I couldn't taste the basalmic so I don't know if it even helps the flavor.

Authentic German Potato Salad

I loved it. My kids even ate it all up. I cooked the potatoes whole then cut them up (that's how I originally learned the salad). I also added a tablespoon of capers - they round out the flavor nicely.

Caramel-Glazed Flan

Delicious. But, after cooling overnight in the fridge, it stuck to my glass baking dish and came out in clumps. I'll try it again in a non-stick pan.

Green Bean and Portobello Mushroom Casserole

Too much garlic flavor - too many mushrooms - the almonds did nothing for this. I'm sorry to be so critical, but I just didn't like it, nor did anyone else.

Pizza Dough III

Good but not great. I didn't follow the recipe exactly. I let my pizza rise for the first 1/2 hour as directed and then let it rise again about 45 minutes more. Then I cooked it at 425 F (instead of 350 as directed) after brushing it with olive oil on both sides. It was still not quite done to my liking -- doughy.

Christmas Creamy Egg Nog

I loved it, however one of my kids didn't. It was a little sweet, and, as previously mentioned, it will separate overnight and look unappealing. I liked the thickness, I thought it was just right.

McCormick's Delicious Deviled Eggs

I wasn't too fond of these. I used a Lawry's seasoned salt and maybe it is significantly saltier than McCormick's however, that wasn't the only issue. I prefer some stuff in the mixture, like onlon and pickled relish. If this is your thing, though, it could be good. I'll skip the recipe next time.

Homemade Vanilla Pudding

Nice flavor. It came out a little "gloppy" though. I could see wisking an egg yolk into the cold milk and stirring constantly then cutting back on the corn starch. Maybe that would help with the consistancy.

German Chocolate Cake III

Drop dead delicious. I helped my 10 year old girl make this and we made very few substitutions. We soured some milk with vinigar for the butter milk, used all-purpose flour and semi-sweet chocolate with corn syrup. It still came out great. Very good recipe.

Mama Corleone's Sausage and Peppers

I used hot italian sausage. It was still good. However, I would still use a few red pepper flakes. Also, the volume of finished product calls for a very large skillet or even a wok.

Turkey Tetrazzini

I halved the noodles and added green peas instead of the pimentos. It was good enough for my kids to eat so I gave it four, however for me it is more a three star recipe. That said, I would definatly dice the turkey next time. It was much too bulky sliced.
