Wonderful taste, but I have to agree with others that it was a little dry. Next time I am going to add a can of green chiles and 1/2 can creamed corn.

Pope's Valentine Cookies

This recipe turned out great!! Thanks for sharing. I pressed the cutouts in colored sugar before baking. They turned out beautiful and tasted great. Couple of things... definitely sift the flour and sugar, and I would suggest chilling the dough for about an hour before rolling/cutting.

Golden Rum Cake

Great recipe, everyone loved it!! I used banana flavored pudding as someone suggested, not sure it added much banana flavor though. Next time (oh yes, there will be a next time very soon) I will try pineapple flavored pudding, and include crushed pineapple in the glaze. Thanks for this recipe. Oh, one more thing, for the glaze preparation. After adding the rum, allow the hot glaze to sit for about 5-10 minutes to allow the ethanol to evaporate off. The top of my cake had a distinct "shot of rum" flavor that might be too much for some guests or kids.

Black Bean and Corn Salad II

Great recipe!!! Few changes: I did not use avocado, I used red instead of green onion, and I added a tbsp of honey to the dressing. Everyone LOVED it!

Fresh Green Chile Quiche

Turned out great! I used fresh hatch chiles... yumm! I made a few subs, as suggested by others. I used crumbled tofu instead of feta (similar texture), Asiago instead of Monterrey, Colby instead of Cheddar, and 4 eggs rather than 3. I also added some spices - crushed red pepper, paprika, chili powder, cumin, etc. I had small pie crusts so this mix was enough for two. Thanks for the recipe!

Peach-Basil Sangria

Only 3 stars, b/c to me, it needs some work. I just tasted like peach nectar... and why ADD sugar to peach nectar, I'm not sure. I am going to try again with different ratios. Maybe two bottles of wine to 3 cups nectar, 1 cup basil, juice of two lemons, and maybe, just maybe 1/2 cup sugar. Thanks for the recipe though, I would not have thought of this combination. Just needs a little tweaking for my tastes. Take care!

These turned out GREAT, everyone at work loved them and could not believe that I hadn't picked them up from a bakery on the way in. I made a fresh blackberry jam to fill them, perfect combination of sour and sweet. I will definitely keep this quick dough recipe on hand!!!

Spinach Quiche

Outstanding! I made many a quiche with my mother, but this was my first on my own. I made a few adjustments for what I had on hand and my own preferences but this recipe gave me a great guideline... I used mozzarella vs swiss, shallots/garlic vs onion, added grated carrots, 50:50 low fat milk to half and half vs milk alone. Also, I left the butter out entirely sauteeing the shallot/garlic in a tbsp olive oil, and I used 3 whites and 2 yolks. One thing I have to say is that I followed others advice and attempted to split the mixture into two pies... NOT a good idea. My quiches, although they taste great, are pretty thin. One big fat quiche would be more presentable for a potluck then a skinny minnie two. Thanks again!!!

Southern Potato Salad

This turned out OK. And I say OK b/c I absolutely hate potato salad but I ate this and thought it was OK. My b/f on the other hand (who requested potato salad) LOVED IT! This is an easy recipe for the potato salad first-timer, thanks!

Veggie Pot Pie

Great recipe. I went ahead and used double the cornstarch. And, I replaced the cauliflower with crumbled hard tofu, added some thyme and cayenne pepper, and added some frozen green peas. It turned out wonderfully! Thanks.

Aaahh! Potato Soup

This was simple and great. My boyfriend who is always complaining about sub-par potato soups said it was the best he's had in a long time. I made a few adjustments/additions: veg broth, small onion (chopped), 6 small garlic cloves (minced), processed the soup in blender, and half cup chopped chives added with the cream. It was great great great! We almost ate the whole batch btwn the two of us... Thanks for this recipe.
