Dee's Date and Nut Bread

Brownie Oat Cookies

These are easy, healthy, and satisfying. No, it won't compare to a full-fat brownie, but how could it? I played a bit with the recipe - one whole egg instead of egg whites, old-fashioned instead of quick oats, added about 1/3 to 1/2 cup of applesauce and much less corn syrup, and when the batter was a bit runny, added rice krispies until it seemed more like cookie batter consistency. Loved them!

Buttermilk Oatmeal Muffins

I think this recipe is almost identical to the one my mom made when I was growing up (Better Homes & Gardens Cookbook). These are just good, wholesome breakfast food. I used rolled oats (and added a few unsoaked ones to the batter for texture), substituted prune baby food for all but 1 tsp of the oil, and added vanilla and cinnamon. Will use half whole-wheat flour next time. Delicious!

Healthy Garden Salad

I would give this 10 stars if I could. I can't believe I waited this long to review it! Made it for the first time in June, and have made it at least 5 times since. OUTSTANDING flavor combo, and very easily customized. I have tried several variations, and my favorite version includes a handful (maybe 1/3 c) finely diced green pepper, basalmic instead of red wine vinegar (though color is affected if you're entertaining), 1/2 c cilantro, extra light olive oil instead of grapeseed oil (and only 2 TBSP). Thank you, thank you, thank you - I don't believe I'll ever go a summer without making this!

Cucumber-Watermelon Salad

This definitely has a pickled flavor (think mini gherkins) and though it is tasty, I think it would benefit from less vinegar and sugar. Watermelon and cucumber are already naturally sweet, and the vinegar (in this amount) seems to distract from the taste rather than enhance it. Thanks for a great start, but I'll make modifications if I prepare this in the future!

Blonde Brownies I

As other reviewers state, this is definitely a bar cookie as opposed to a blonde brownie. However, knowing this, it's a great, EASY recipe. I omitted the nuts and doubled the recipe, using oil (1/2 cup) instead of butter. Prep took hardly any time at all, and I baked in a 9x13 pan for 35 min. They're fantastic! (P.S. I think the overly salty taste described by other reviewers may come from salted butter. I cut the salt in half at first, then ended up adding more.) Thanks for a quick treat!

Health Nut Blueberry Muffins

These are WONDERFUL!!! I have tried 2 other healthy blueberry muffin recipes on this site, and loved both of them, but I must say this is my absolute favorite. I couldn't find oat bran so I used wheat bran, followed suggestions and used brown sugar instead of white, and used extra light olive oil instead of vegetable oil. Made a double batch and they were gone within a week! I agree with other reviewers that the walnuts are equivalent to icing on the cake, and I don't think I'll ever make these without them. Thanks for the great recipe!!!

Brisket with BBQ Sauce

I made some modifications (out of pure laziness on my part), but this was still a huge hit. First, I used onion & garlic powder instead of onion/garlic salt, and just added a little bit of table salt. I didn't marinate ahead of time, but threw the brisket in the slow cooker on low for about 10 hours. (I had a bigger crock pot and a smaller brisket, so I had to add a little water, too.) About an hour before serving, I shredded the meat, dumped a bottle of "Lip Lickin'" Barbeque sauce (something I found in the grocery - one of the few without corn syrup) into the mix and threw it back into the crock pot to heat. Served it on rolls and everyone raved!

Classic Spanish Sangria

This is a hit wherever I serve it, although it is pretty strong. Depending on the crowd, I replace up to 1 cup of the rum with orange juice, and it's still delicious!

Mexican Baked Fish

This is my go-to meal when I'm pressed for time. It's SO quick and easy, and it's hard to find healthy recipes that fit that description. (I use reduced-fat cheese and baked corn chips. Still great!)

Blueberry Spinach Salad

LOVED this recipe! My one mistake (made in haste) was blindly trusting that the amount of dressing in the recipe would suit my taste, and I ended up with a very soggy salad. Try starting with half, and work your way up from there!

Spinach Cantaloupe Salad with Mint

I made this recipe in August and it got rave reviews from friends. I tend to be just slightly squeamish when it comes to dressings that are heavy on oil, so I substituted water for some of the oil the second time I made it (as the jelly thickens the mixture anyway), and I much preferred this lighter alternative.

Pear Honey Cranberry Sauce

Good quick and easy recipe. Honey flavor is definitely discernible, which can be good or bad depending on your taste. I may try again with orange juice, as other reviewers have suggested, and I think this will improve it for me.

Best Brownies

After reading other reviews, I've determined that it must behave differently for different cooks. I found that the brownies were much too sweet for my taste, and the texture was on the gooey side. BUT, with that said, if you like very sweet, gooey brownies, these are for you!

Blueberry Nut Oat Bran Muffins

These were excellent. I made them for friends and family and everyone loved them. I did not have oat bran, so I followed other reviewers' suggestions and substituted wheat bran. They were delicious. I added 1/4 cup chopped walnuts instead of 1/4 ounce, since this amount seemed very small to me. I'm making them again!

Baker's Secret Pie Crust

I ended up adding too much liquid (dough was a little sticky), but this crust STILL turned out perfectly! I will not be using any other crust recipes - this is definitely IT. I also didn't have cake flour, but did not think the crust suffered for it.
