Herbed and Spiced Roasted Beef Tenderloin

This recipe was delicious! I made this rub with dried rosemary and thyme(using only 2 tsp instead of 2 tbsp.) since I did not have fresh on hand. I added about a tsp of water to hydrate the herbs before adding the oil. I also substituted a pearl onion already in the frig for the shallot.

Flourless Chocolate Cake II

Excellent! Note: the way to avoid the graininess of the cocoa is to SIFT it into the batter. It comes out smooth as silk and has that added richness that the chocolate bars alone can't deliver!!! I also made it in a springform pan, cut a piece of wax paper to fit, sprayed it with Pam and dusted it with cocoa. No problem inverting onto another plate. Cooked it at 375 degrees for 20 minutes in my convection oven.

Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

This recipe was fabulous...and easy since I used left over pork roast. I added 1/4 teaspoon ground ginger (instead of using fresh) and 1/4 teaspoon red pepper flakes, both to the sauce. Enjoyed by all!

Tequila Shrimp

Delicious! I used pre-cooked shrimp, so I changed the cooking sequence. I sauteed the garlic in 1 TBS. butter then added the tequila, turning the heat to HIGH to boil off the alcohol taste. I added the cooked shrimp last just to heat through. The flavors were perfect!

Guy Approved Meatloaf

This recipe is great. I didn't have enough chips (only 1/4 cup) so I also added a 1/2 cup of oats. Mixed it using my Kitchenaid mixer. Didn't use the bacon because I didn't have any. Cooked it for about 50 minutes, topped the loaf with more BBQ sauce (Bulls Eye honey smoke), then cooked it uncovered another 10 minutes. I usually hate anything with ground beef but not this recipe.

Sesame Pasta Chicken Salad

Great! I used the leftover roasted chicken from the night before so this was really easy. I cut the oil to 1/3 cup as suggested by someone and added some snow peas. Next time I will try adding some red pepper flakes for some extra spiciness.

Honey-Orange Glazed Ham

Excellent & easy - no changes needed. I had all the goodies ready for our Christmas dinner...but forgot about the glaze for the ham. With all the stores closed, I had to find a recipe I could make with the ingredients I had in the house. Everyone loved it!

Cinnamon Coffee Frosting

This was excellent. Doubled the recipe, which resulted in more than enough to frost a 9" double layer chocolate cake. I increased the instant coffee and cinnamon by 50% and finely ground them together in a coffee grinder. I always sift the confectioners sugar, then measure. 2 cups becomes almost 3 cups after sifting, which might explain why 3 cups (unsifted) is too sweet.

Best Ever Sausage with Peppers, Onions, and Beer!

Excellent recipe and fairly easy to make. I cut the recipe in half but used a full can of tomato paste as someone had suggested. I cooked the sausage using my "no oil" method and it came out fine...pierce sausage all over with fork and cook in about 1/4 inch of water. Once the water boils off the sausage will fry in its own fat.

Sauce Rosee

This is a family hit! I have made this recipe several times, using it as a sauce over lobster ravioli. My only recommendation is to add good quality wine before the tomato sauce, bringing it to a boil to evaporate off the strong alcohol flavor. It will also help to thicken the sauce.

Bean and Kale Ragu

Delicious! Made some changes as recommended by others. I cut way back on the kale (my DH is not a fan) and used baby kale to cut the cooking time in half. Added about 1/4 cup of cooking sherry and 1/4 tsp of red pepper flakes with the onions and kale, cooking off the alcohol. Doubled the garlic. Dissolved a chicken bouillon in the 1 1/2 cup of hot water, then added it to pan. Finished as directed. Served with heated sourdough bread.

Sesame Broccoli Salad

This was a very flavorful recipe and we loved it! To cut calories, instead of 2 teaspoons sugar, I used 1 tsp. sugar and 1 tsp. splenda. Otherwise, no changes.
