Cinnamon Coffee Frosting

Reviewed: Dec. 7, 2014
This was excellent. Doubled the recipe, which resulted in more than enough to frost a 9" double layer chocolate cake. I increased the instant coffee and cinnamon by 50% and finely ground them together in a coffee grinder. I always sift the confectioners sugar, then measure. 2 cups becomes almost 3 cups after sifting, which might explain why 3 cups (unsifted) is too sweet.

Bean and Kale Ragu

Reviewed: Apr. 24, 2014
Delicious! Made some changes as recommended by others. I cut way back on the kale (my DH is not a fan) and used baby kale to cut the cooking time in half. Added about 1/4 cup of cooking sherry and 1/4 tsp of red pepper flakes with the onions and kale, cooking off the alcohol. Doubled the garlic. Dissolved a chicken bouillon in the 1 1/2 cup of hot water, then added it to pan. Finished as directed. Served with heated sourdough bread.

Quinoa and Black Beans

Reviewed: Mar. 29, 2012
Very tasty. My first time making Quinoa. Added only one can of beans as suggested by another reviewer and thought the balance of flavors was perfect.

Raspberry Sauce

Good flavor. Next time I will try it with less cornstarch and less water for a richer flavor.

Flourless Chocolate Cake II

Reviewed: Feb. 15, 2011
Excellent! Note: the way to avoid the graininess of the cocoa is to SIFT it into the batter. It comes out smooth as silk and has that added richness that the chocolate bars alone can't deliver!!! I also made it in a springform pan, cut a piece of wax paper to fit, sprayed it with Pam and dusted it with cocoa. No problem inverting onto another plate. Cooked it at 375 degrees for 20 minutes in my convection oven.

Honey-Orange Glazed Ham

Reviewed: Dec. 25, 2010
Excellent & easy - no changes needed. I had all the goodies ready for our Christmas dinner...but forgot about the glaze for the ham. With all the stores closed, I had to find a recipe I could make with the ingredients I had in the house. Everyone loved it!

Caramel Frosting V

Reviewed: Dec. 19, 2008
The flavor of this recipe is excellent but, as said by others, the key to getting the fluffy texture is in the complete chilling, not just cooling, of the mixture. I took it out of the frig too soon, then put it back in for longer until I was sure it was good and cold. I also added some confectioners sugar for just the right spreading consistency.

Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

Reviewed: Dec. 19, 2008
This recipe was fabulous...and easy since I used left over pork roast. I added 1/4 teaspoon ground ginger (instead of using fresh) and 1/4 teaspoon red pepper flakes, both to the sauce. Enjoyed by all!

Spinach Quiche

Reviewed: Aug. 6, 2008
Very good but too greasy if you follow the recipe, as is. I used less than the 1/2 cup suggested and it was still too much. I looked back at some old reviews and saw recommendations for as little as 1 tablespoon butter. Note: Made this again with 1/4 cup butter and it was much better.

Tequila Shrimp

Reviewed: Jul. 22, 2008
Delicious! I used pre-cooked shrimp, so I changed the cooking sequence. I sauteed the garlic in 1 TBS. butter then added the tequila, turning the heat to HIGH to boil off the alcohol taste. I added the cooked shrimp last just to heat through. The flavors were perfect!

Guy Approved Meatloaf

Reviewed: Jan. 23, 2007
This recipe is great. I didn't have enough chips (only 1/4 cup) so I also added a 1/2 cup of oats. Mixed it using my Kitchenaid mixer. Didn't use the bacon because I didn't have any. Cooked it for about 50 minutes, topped the loaf with more BBQ sauce (Bulls Eye honey smoke), then cooked it uncovered another 10 minutes. I usually hate anything with ground beef but not this recipe.

Awesome Slow Cooker Pot Roast

Reviewed: Dec. 10, 2006
This was way too salty for my family. My experience has been that anything made with prepared soup doesn't compare in taste and quality to something made completely from scratch, but I thought I would give it a try anyway because of the 5-star rating. I will stick with my gut next time.

Sweet Potato Casserole II

Although the flavor was good it was too sweet as a side dish.

Roasted Vegetables

Reviewed: Dec. 6, 2006
Excellent! Like some others suggested, I substituted carrots for the squash. I also used dried Thyme (only 1 teaspoon!) since I didn't have any fresh on hand. I read somewhere that when replacing fresh with dried only 1/3 the amount should be used and this has always worked out fine for me.

Sesame Broccoli Salad

Reviewed: Oct. 26, 2006
This was a very flavorful recipe and we loved it! To cut calories, instead of 2 teaspoons sugar, I used 1 tsp. sugar and 1 tsp. splenda. Otherwise, no changes.

Apple Crisp II

Reviewed: Oct. 18, 2006
The flavor was very good but the Granny Smith apples came out too soft, almost mushy. I will try leaving out the water next time.

Sauce Rosee

Reviewed: Oct. 18, 2006
This is a family hit! I have made this recipe several times, using it as a sauce over lobster ravioli. My only recommendation is to add good quality wine before the tomato sauce, bringing it to a boil to evaporate off the strong alcohol flavor. It will also help to thicken the sauce.

Lisa's Chocolate Chocolate Chip Cake

Reviewed: Dec. 22, 2005
This was a very easy cake to make. I made it for my husband's birthday, following the recipe exactly. He loved it! He especially liked that it did not have any icing. I liked it too but not as much as him.

Beef Tenderloin with Horseradish-and-Roasted Garlic Crust

Reviewed: Dec. 22, 2005
My family and I just thought it was okay. It didn't ruin the beef but it also didn't enhance it. Even though I used the full garlic bulb, I would have liked more garlic flavor.

Sesame Pasta Chicken Salad

Reviewed: Sep. 7, 2005
Great! I used the leftover roasted chicken from the night before so this was really easy. I cut the oil to 1/3 cup as suggested by someone and added some snow peas. Next time I will try adding some red pepper flakes for some extra spiciness.
