Belgian Waffles

Made for Christmas morning, and making again tomorrow morning for my daughter's sleepover. Excellent, excellent flavor, texture, soft in the middle and crispy on the outside! I made the mistake of making a double batch on Christmas morning. This recipe makes a lot of waffles. There are 4 in my family, and I believe a single batch made 10 large, restaurant size waffles that take up most of a medium size plate. I have a couple of huge waffle fans in my family, and a single batch would have been PLENTY. Also, I mixed this up, put it in the fridge overnight, and it rose just fine. Maybe not as much as if the dough had been allowed to double in room temperature, but it definitely rose! I simply pulled it out the next morning and cooked the waffles. Easy!

Rhubarb Strawberry Crunch

Super! Followed about exactly (didn't measure my fruit, just had 1# berries and 5 stalks rhubarb), and it's beautiful! Sometimes my streusel topping don't get crunchy, but this one turned out perfect!

California Grilled Veggie Sandwich

Wow, great sandwich. Followed exactly, except I only had hoagie rolls. Also had a portabello mushroom, so sliced that up and added it. One of the best sandwiches I've had, ever (meat or no!).

Slow Cooker Stuffing

I tweaked the recipe a bit to allow for our personal preferences. But it's really the crock pot part of this recipe, saving oven space on a big holiday, that makes this recipe. I started with smaller amounts of liquid because I was fearful it would come out mushy. I ended up needing most of the liquid, and this came out surprisingly well! The taste and texture was excellent: My only complaint is that it wasn't as "pretty" as a baked stuffing.

Luscious Slush Punch

I've been making this for a couple of years. It's easy, you can use whatever flavor jello you like, and everyone LOVES the stuff. Super easy in the gallon freezer bags and made a day or three ahead of time.

Cranberry Sauce

Just made this for Thanksgiving tomorrow. OJ container was almost empty, so I used about half OJ and half apple cider. Dashed in some nutmeg. Whole thing took about 5min from the time I printed off the recipe, and it's delicious (and I'm not a huge cranberry sauce fan).

Juicy Roasted Chicken

I also chose this recipe because I had a couple whole birds and was short on time. I did add some garlic and thyme to the salt and pepper rub, but other than that I followed pretty much exactly. I left the house and it cooked for about 2 hours with no foil or basting, and it was still superb. I made gravy with the drippings: Simply transfer all the liquids to a saucepan, dissolve several tablespoons of cornstarch in a bit of cold water, and add cornstarch mixture to liquids until desired consistency. Tastiest gravy ever! Super easy recipe with great results.

Irish Cream Creme Brulee

WOW I have to wholeheartedly say, this is probably the best recipe I've pulled from this site. Hubby and I were at a fancy restaurant the other day and had some superb creme brulee, so of course I wanted to try at home. This is even better. It's a tad time consuming, but not really all that difficult. I heated the cream and sugar to about 140 degrees with no problems. I whisked briskly but tried to not get it frothy. I had no lumps or froth. The hardest part is dealing with the water bath, transferring everything in and out of the oven. Mine made 4 medium and 3 small ramekins. All set up absolutely perfect. Husband had a fun time torching the sugar in the raw we used on the top. Which by the way, tasted great but was probably too course to melt exactly right. Simply unbelievable texture and taste! The irish cream with the creme brulee is divine and melds perfectly. Reviewers aren't joking, the irish cream flavor comes through very well. I might even lower the amount if I make it again. I will definitely make this again the next time I have a craving, or if I truly want to impress someone at a dinner party.

Cake Balls

Seriously, my favorite kind of recipe. Fairly easy, very versatile, and people love them. Some of the flavors I've tried taste sort of fake (strawberry), others are sinful: And still, everyone asks for more. Use chocolate, chocolate, and chocolate, and you won't be able to convince your friends it's not a fancy truffle. The best trick I've picked up here? Freeze the balls till they're pretty solid. Buy a good size chunk of floral styrofoam. Buy some bamboo skewers. Put the frozen balls on the skewers, dip well, stick in the styrofoam to dry, remove skewer if you want. Voila, perfectly dipped cake balls.

Slow-Cooker Pepper Steak

I have made this a few times now. I use stew meat, and add the peppers a little later. Family likes it. I consider it a good recipe anytime my kids can see the veggies and will still eat it without complaint.

Ham and Cheese Quiche

For a first time quiche maker, I found that this turned out better than I expected. Eggs set up very well, swiss made it tasty. Anytime I cam hide spinach and the family likes it, it's worth making again!

Easy Mashed Potato and Roasted Vegetable Enchiladas

My husband just adores enchiladas. I've been trying to skip the meat and up the vegetables once or twice a week. This was the recipe we chose, and I was not disappointed. Husband has me figured out with the no meat and uber veggie recipes, and actually stated "I know, there's no meat, don't bother telling me, it's so good I don't care". Honestly, one of the best vegetarian recipes I've tried thus far. I do prefer chicken enchiladas, but this is a very close second, and healthier. Definitely will make again. Additionally, these came out prettier than a standard batch of enchiladas.

Crab Rangoon III

Wow, these are superb! I've always loved these from restaurants. This was my first time making them at home. I followed the recipe except omitted water chestnuts and added green onion. While they were extremely good, I agree that decreasing crab to 1 can would be plenty. Recipe would have easily used a whole package of wonton wrappers (we used 1/2 of the filling for 1/2 pkg of wrappers). I haven't used wonton wrappers before, but it was super easy. They stayed together without leakage problems. We did fry them, only because we happened to have our fryer out from making homemade doughnuts the other day. Whole family loved them! Just as good as a restaurant, and probably better with less crab.

Chunky Potato Soup

Wow. A really easy recipe. It's a very pretty and tasty outcome. I didn't have swiss, so used cheddar. Next time we'll try the swiss: Bet it's great. UPDATE: Yup, the swiss rocks....my favorite potato soup recipe.
