Enchiladas

Reviewed: Feb. 22, 2008
I think this recipe was good, but I think it needed more directions. You don't fry the shell per say... you place it in the pan with oil for a short time until it's plyable and easy to fold. I only had mine in for 7-10 seconds on each side. Plus I added taco seasoning to the beef just like if you were making tacos... I don't think this would have had near enough flavor if I wouldn't have done that... it would have been bland, especially since the recipe doesn't call for any other spices, onions, or garlic. But in the end, with some minor changes it turned out good and everyone liked it!

Peanut Butter Balls V

Reviewed: Dec. 3, 2008
I'm giving this a 4 star because it was a great tasting recipe and we love that it uses ground graham crackers instead of rice crispy's, but in the making the balls were hard to get into a ball with out kind of falling a part a little. (the recipe calls to add only 2 of the 2 1/2 cups to the peanut butter mixture, then add the remaining half cup if needed... I only used the 2 cups, and didn't even add the extra half cup and it was still too dry) I almost added a bit more peanut butter to help that out, but I just proceeded based off of the instructions. The outcome was fabulous! I tried the peanut butter balls with rice crispys and my hubby didn't like them... with the graham cracker, you don't get that crunch and they are more creamy... much better! Next time I make this I think I'll add some extra peanut butter and only use the 2 cups graham crackers for sure! Thank you for the good recipe!!!

Hamburger Cake

Reviewed: Mar. 29, 2007
I would have given this a 5 star if all of the ingredients would have been listed in the INGREDIENT section. Plus I don't like candy with my cake or brownies... so melting candy and using it as cheese didn't go over well... plus like other reviewers said, it gets hard after it cools... so it makes it hard to cut the cake... I would just omit the "cheese" all together... HAMBURGERS don't have cheese on them... cheeseburgers do... and since this is a hamburger cake... no need... if you really want it... I'd think of something else... To make the lettuce easier... just get a plastic baggie, green food coloring, and shredded coconut, put a few drops of food coloring in with some coconut and shake it up... I think coconut mixes much better with cake and icing vs some sweet candy. Anyway, hope yours turns out good!

S'mores Bars

Reviewed: Feb. 9, 2008
These S'mores Bars really do resemble that campfire toasted S'mores! I was surprised actually. I do think it's important to really spray the pan before putting in the graham crackers... I sprayed my pan like I normally would and I still had some trouble getting them off the bottom of the pan, but that doesn't change the outcome! We will be using this recipe often!

Butternut Squash Casserole

Reviewed: Nov. 27, 2008
Oh my golly!! This was FABULOUS!!! I followed the directions on the butternut squash for cooking it, as well as previous reviewers. I sliced the squash length wise, placed cut side down on a jelly roll pan and baked for approx 45 min. (it does take longer, but it is easier, and I was able to prepare my other dish while this was baking so it worked out nicely) Anyway, after it baked, I flipped the squash over and let it set for a little bit so it would cool a bit, and then I removed the skin. (it was very easy) I kind of thought that the topping would taste fine with out the vanilla waffers so I just used brown sugar and some butter to make a crumble topping. It was so good, and it was the very first thing gone!!! I love when that happens!!! Everyone was raving about the butternut squash casserole and it is now a requirement that I make it every year from here on out! Fine with me, b/c ALL of the ingredients (besides the squash itself) are all ingredients that I have on hand at all times. So it's not only inexpensive, it's actually convenient! My husband was very against me making this b/c he wanted something he knew he'd love... He took one bite, got out of his seat to come and find me to tell me how AWESOME this was and he couldn't believe he liked it so much... so that says a lot right there! He loved it enough to stop eating to come and tell me that! Thank you so much for sharing... this is such a wonderful dish that is a little out of the ordinary!

Chicken Tetrazzini I

Reviewed: Sep. 7, 2007
This is an old time favorite during my childhood growing up. We loved this recipe. It was my moms recipe and since she passed away when I was in high school I had no idea how to make it. Now that I am a mother myself, I wanted to bring back some good ol' childhood memories so I decided to check on here, and this is it exactly!!! We love this recipe, it's sooooo good! Thanks!

Delicious Ham and Potato Soup

Reviewed: Oct. 5, 2009
This really is delicious!!! I am a crock pot lover... and so I followed the advice of the another reviewer and used my crock pot to prepare. I put in everything but the butter/flour/milk and let it cook on low all day long. I added a little over an extra 1/3 C. of the chopped ham... an extra 1/3 C. chopped celery to get in those extra veggies for the kids... and I didn't have milk so I used half and half and I actually think that helped to make the soup a bit thicker... the way we like it! When it was time to add the butter/flour/milk I just followed the directions to put that together and added it to the crock pot when it was ready. We ate about 45 minutes later. The kids gobbled it down and even asked for seconds. We liked adding shredded cheddar cheese the the soup when serving. Thank you for sharing this wonderful recipe! Perfect for these cold fall days!

Chinese Cabbage Salad I

Reviewed: Jul. 21, 2008
I've made several variations of this salad, and this one was the best. I had so many compliments. The only change I made to this recipe was an idea I got from a previous reviewer, and that is: Before toasting the crushed noodles and cashews, spray them with spray butter and sprinkle the seasoning packet from the ramen noodles over top. It adds flavor and is an easy step to incorporate. Thank you for sharing this wonderful recipe!

Good Old Fashioned Pancakes

Reviewed: Sep. 15, 2012
I made these exactly as the recipe calls for. The kids (I have 4 that are old enough to eat them) and they LOVE pancakes! 2 of my children wouldn't eat them b/c they were salty!! 1 tsp of salt plus 3 1/2 tsp of baking powder is TOO much!!! I wondered as I made them but still followed exactly and I wish I had at least left out the 1 tsp salt! Maybe with out all the salt it will be better... maybe only 2 tsp baking powder too... I don't know! Anyway, we probably won't use this recipe again as written anyway... I have another recipe I use that is better.

Chicken Pot Pie IX

Reviewed: Oct. 8, 2009
Yes... this was delicious. I didn't change anything other than added the extra celery/carrots/onions that I chopped too much of. (which wasn't that much more) Other than that, I didn't change anything. It was delicious. I don't think the sauce was too thick at all! I like a thicker sauce in most things anyway, but this wasn't too runny or too thick. It was the perfect consistency. My husband loved it and most of my kids loved it too. The picky one just ate the chicken and pastry portion but even so it was a big hit and it was easy to prepare! I will definitely bake this again. A great way to get in some good veggies! Thank you!

Cream Cheese Dessert Wedges

Reviewed: Jan. 7, 2007
These were pretty good... I do suggest mixing together extra cinnamon and sugar to sprinkle on the biscuits before you place the cream cheese mixture in, it really helps with the flavor... rounds it out I guess... but over all it was really good, everyone seemed to like them. Plus it was fast!

Spinach Cheese Manicotti

Reviewed: Apr. 11, 2012
Very delicious! I went ahead and added 1/2 tsp red pepper flakes, and about 2 tsp of italian seasoning. I replaced parsley with basil as well. I used 1 tsp minced garlic and used a little onion powder plus 1 Tbsp of minced onion. Pretty much the same stuff called for in the recipe just altered a bit to our tastes. I used the red sauce from a lasagna recipe i found on here (worlds best lasagna) instead and it was perfect!! Thank you for sharing this recipe, we all really loved it! Oh... I did also cook my manicotti for maybe 3 minutes or so before stuffing them... it worked great on cutting down the cooking time a bit but didn't make them too difficult to stuff!!

Easy Chili I

Reviewed: Feb. 16, 2012
Excellent and easy!! We didn't have jalapenos so I added some cayenne pepper (1tsp) to add a bit of extra spice. I also added in about 3/4 tsp celery salt, and maybe a tsp of basil and oregeno. Just to flavor it a little more. I usually don't like to alter a recipe before trying it once the way it calls for, but I have made chili so many times I thought it would be ok!! I'm sure it would have tasted good before my additions! I only added spices from another chili recipe I usually make from allrecipes. I think this one tasted just as good and was much easier! Thanks for sharing!
