Hungarian Mushroom Soup

Love the recipe. I did use the immersion blender as my husband just had some extensive dental work. This is how good it is. My granddaughter hates mushrooms. I didn't tell her what was in it and she loved it. She'll be asking for Hungarian soup again. I did double the recipe and there is enough for leftovers.

Pita Chips

These just came out of the oven. They are tasty. I didn't have any chervil so I just used the other ingredients. The next time I think I'll try some other combos of herbs. The only comment I have is they took about 20 min. in the oven at 400. They are a keeper. Forget the store bought.

Pumpkin Cranberry Bread

I have been making this recipe for several years now. It is one that I make at Christmas as give aways. Everyone loves it and I am asked to be sure to make it. I have modified it by using applesauce instead of oil and omit the nuts in case anyone has alergies. No one misses them.

Cheese Lover's Tuna Casserole

I needed a tuna casserole that my daughter who doesn't like fish would eat. The cheese did it. I did make some changes. I used whole grain egg noodles(12oz). I sauteed a small onion a couple cloves of garlic and fresh mushrooms. I cut the cheese in half and grated it. I used a can of cream of mushroom and a can of cream of celery both low sodium. To keep it rich I used about a half a can of 2% canned milk. Topped it w/ bread crumbs w/butter and a little cheese. My daughter loved it. Maybe I shouldn't have rated it w/the changes but you can have fun w/this a basic start.

Down Home Macaroni and Cheese

Okay, this was the best mac&cheese I have made. I doubled the recipe, sauteed onion and garlic w/the butter before adding the flour. I also added diced ham w/the cheeses. Baked in a 9x13 glass dish. Yummy!!

Best Ever Popcorn Balls

This was a fun and easy recipe to do with my granddaughter for Halloween. I found that my roasting pan was the best to use to put the balls together and letting the mixture cool formed the best balls. I added vanilla to one batch and colored two more orange. I let my granddaughter and her friend form the last batch. They had great fun.

Peach Crisp III

This was delightful. I also increased the topping and added a little brown sugar to the peaches and cooked for 15 min before adding the topping. It wasn't necessary to add extra flour to the peaches as they thickened w/out. Yummy it's a keeper!!

Dinah's Baked Scallops

This worked well for me. I used it on the biggest scallops I have seen 5 to a pound. I did vary the recipe by using bread crumbs and instead of wine I used chicken broth. I hit it under the broiler as suggested and used very little of the butter mixture. Drizzle!! My husband is a seafood fanatic and loved it.
