Bachelor Grilled Cheese

Hey, not everyone is a chef. I actually got into a kick of using my waffle iron for more than just waffles, and one of my favourites is grilled cheese (or other sandwiches) in the waffle iron. just assemble your sandwich, spray pam on the two outsides, and pop in the waffle iron for a few minutes until it's nice and golden. the grid pattern is fun, makes it easy to cut into strips for kids, and practically no cleanup (unless some cheese oozed onto the grill).

Japanese Peanut Salad Dressing

This is a great simple recipe that tastes great. Like other reviewers, I used peanut butter instead of peanuts, decreased the sugar, and used soy sauce instead of salt. Threw everything into the blender while toasting the sesame seeds then shook it all up in a jar before serving. Served on a crisp green salad (thinly sliced onions, celery, julienned carrots) with chicken katsu donburi over white rice -- just like one of my favourite Japanese restaurant dishes. Mmm, I'm salivating.

Spinach Casserole

Following other reviewers' suggestions, I omitted the processed cheese and was liberal with the feta. I was a little nervous making this for the first time since I've never worked with phyllo before, but using butter-flavoured cooking spray made it quick and easy. I brought it to a potluck with three different kinds of lasagna and it still stood out, drawing compliments from everyone.

Cherry Cheesecake Dessert

This is an amazing tasting and amazingly easy recipe. The only problem I had is that when I doubled the filling (trust me, you'll want to) the middle didn't cook enough. I left it in there for an HOUR, trying to get the centre cooked. It's still tasty (especially with my "homemade" fruit topping) but the edges are a little dried out. I need to play with the time & temp to get it just right.

Old Fashioned Paradise Pumpkin Pie

I was never a fan of pumpkin pie until I tried this recipe. I absolutely love the pecan streusel topping, but everything about this pie is fantastic. No doubt one of my favourites. I will continue to make this pie for special occasions.
