Creamed Cucumber Slices

Little heavy on the dressing, but absolutely delicious. This is exactly as I remember my great-grandma's tasted! I've made this several times but cut the dressing ingredients in half.

My kids loved this! I was out of Dijon so substituted honey mustard. It turned out great! It was moist, flavorful and had the right blend of flavors to please even the pickiest of eaters!

Remoulade Sauce a la New Orleans

Coconut Pecan Frosting I

I'll never again use a canned frosting again! This was amazingly simple and delicious. I didn't notice the condensed milk taste that others have, but then again, I did boil it just a bit longer than the recipe states to get a deeper color.

Chocolate Cavity Maker Cake

This is a very good cake, but I'd hardly say that it is a fabulous as the ratings suggest. I used Chambord and Ghiardelli cocoa with a dark chocolate (60% cacao) chunk instead of the chips. I used very high quality ingredients and found it just simply... good. I am not sure if I'll make this again nobody who ate it thought it was that special.

Cornbread Muffins II

At first I was a little surprised by the consistency of the batter. I thought I had made some horrible error, but decided to go ahead and bake them to see what would happen. The BEST cornbread muffins is what happened! These are EXACTLY what I want in cornbread. The right hint of sweet with a little tang of buttermilk and tender moist insides. I did change one thing, and that was that I pre-heated my muffin tins before filling them. This is what my grandmother always did. She claimed that was what made hers turn out properly, so I've always done it that way as well.

Bill's Blue Cheese Dressing

While I readily admit that I reduced the yield of the recipe, I stayed to the original proportions and ingredients. It is not bad, in fact, it is better than most. It is lacking something, but I'm not certain what it might be. I suspect it may be a touch of buttermilk, but I'm not certain. It is still a very good dressing when you have a craving for it.

Ginger-Peach Jam

I didn't have a full 1/4 c of crystallized ginger on hand so I added what I had and a dash of cloves for a bit of zing. It was delicious! I can't wait to make more!

Bolognese Stuffed Bell Peppers

It was pretty good! I am not a huge fan of stuffed peppers, but everyone else in my family enjoys them. This is definitely a recipe that can please everyone. I didn't change anything and I don't think I will in the future either.
