Roasted Lemon Herb Chicken

Easy & tasty. I just threw all the ingredients in a bag with chicken thighs (decreased olive oil) marinated for a couple of hours & roasted in the oven. This will be my go to chicken marinade from now on. The mix of flavors is delicious.

Cream of Chicken and Gnocchi Soup

I've only been to Olive Garden once & was not a fan but this soup is delicious! I had some premade Gnocchi I wanted to use. Trying to cut back on the fat I used 1/2 butter & 1/2 olive oil & non fat milk. It worked just fine. My husband does not like spinach in soup, so I added some chopped cooked zucchini. I forgot the nutmeg but the soup was wonderful without it. Will definitely make again. Thanks for a great recipe.

Roasted Garlic

I wish I had more than 2 cloves of garlic when I did this. It was so good I used one head just on garlic bread & stored the other for later. I used the tent method, cut the ends off & drizzled with olive oil. 400 degrees & about 50 minutes later & the garlic had a nice roasted golden color. Next time I'll make enough to freeze.

Spinach Basil Pesto

This is so good! The lemon zest & juice add a nice freshness to the pesto. I subbed walnuts for the pine nuts. I made this to use as the pesto for AR Tenna's Spicy Pesto Chicken recipe. It looked & smelled so good, I could not wait. I use a piece of french bread to clean out the food processor. This would be great on pizza, as a dip mixed with some goat cheese or ricotta & of course over pasta.

Candied Pecans

Sweet, salty & crunchy, a perfect recipe. I did not have pecans so I used walnuts & lined the cookie sheet with parchment paper. A pound of nuts equals about 4 cups. Today I am using almonds & gifting these tasty treats to a lucky friend. Also chopped a few to use in a salad.

Shish Tawook Grilled Chicken

I had no yoghurt so I did use sour cream instead & only marinated the chicken for a few hours but it was still very tender & full of flavor. No cardamon in the kitchen so I subbed coriander. A very, very delicious recipe.

Fresh Southern Peach Cobbler

My husband wanted cobbler instead of cake for his birthday. Fresh peaches are not in season in April so I used frozen instead & doubled the recipe. The only change I would make is to cut the sugar/cinnamon topping in half, there was just too much of it. Great recipe & the spices are just right, the topping is very cake like. A keeper!

Coconut Custard Pie III

I read the reviews & used 1 1/2 C non fat milk, 1/2 C non fat half & half, 3 eggs & 1 egg yolk & 1/2 C sugar. A deicious custard pie with coconut. This completley filled a Marie Callendar's deep dish frozen pie crust. It took about 40 min to bake in my oven. Easy to make & delicious.

Chef John's Macaroni and Cheese

Very, very good. I used less Thyme but will just leave it out next time. Since I like a lot of sauce I will use less pasta. Love the yellow color & the taste the mustard adds. A classic but not boring Mac N Cheese. Love Chef John!

New York-Style Cheesecake

Oh my! This is the first NY style cheesecake I've ever made. I am an experienced baker & was skeptical about leaving it in the oven for so many hours after baking, but it turned out perfectly. No cracks! My only change was subbing non fat milk & light sour cream. It was creamy & with a light citrus undertone. My dad & husband loved it. Thanks, Chef John!

Chef John's Banana Bread

Moist, flavorful & did not fall apart when sliced. I subbed whole wheat pastry flour for the white & reduced the sugar to 3/4 cup. This is the best recipe I have found & tastes like my grandma's banana bread.

Sweet Corn Bread

This is the 2nd time I made this & it turned out beautifully. I used whole wheat pastry flour instead of white & added a small can of diced green chilies & a cup of grated cheddar. This is the way cornbread should taste! Buttery interior & a crispy top.

Good 100% Whole Wheat Bread

This is a great recipe! Makes a small & yummy loaf. I did not add the powdered milk & used butter instead of margarine & added some flax seeds. Set my bread machine for a light crust & used the 1.5 lb express bake setting. Fresh bread in an hour!

Steakhouse Wheat Bread for the Bread Machine

I set my machine for 1 1/2 lb loaf with a light crust. I used whole wheat bread flour & whole wheat pastry flour, so I had to add more warm water.I did not have coffee granules, so I replaced the 3/4 water with lukewarm coffee. I also used agave syrup in place of the honey. It's super sweet so I skipped the TB of sugar. Very tasty!

October Oatmeal Pumpkin Muffins

These were so moist & full of flavor. I used whole wheat pastry flour & omitted the maple syrup. Next time I'll add the oatmeal with the other dry ingredients. I doubled the recipe & got 18 regular sized muffins.

Clone of a Cinnabon with less sugar & no icing

This is the second time I have made these using my bread machine on the dough cycle. The dough is soft & easy to roll out. I reduce the butter/cinnamon/sugar mixture & eliminate the frosting as a personal preference. I also use a larger rimmed baking sheet instead of the 9x13 cake pan, as these are BIG rolls! These are SO delicious, even better than the chain. And so much cheaper to make!

Toll House® White Chip Chocolate Cookies

A very yummy cookie! I followed the recipe except for using chocolate chips instead of white chocolate chips. I used a cookie scoop & my cookies did not spread much, probably because of the cold temp today. Soft & chewy with a strong chocolate flavor.
