Simple Tortellini Soup

Reviewed: Feb. 18, 2015
Hey, this was great! Very easy too. I added some frozen kale, onion powder, oregano, and garlic powder and substituted the beans for green peas. The red wine vinaigrette just made this. Thanks for a wonderful recipe that was a snap to make on short notice after a walk on a 12-degree F night! Warmed us up right.

Zippy Shepherd's Pie

Reviewed: Nov. 19, 2014
This is absolutely delicious. A tip: make it the day before you want to eat it. I thought it was a little soupy when it was fresh out of the oven, but a night in the fridge firmed it up and the reheated portion was MAGNIFICENT. I'll 100% be making this again.

Chicken and Gnocchi Soup

I added a lot more garlic and some Italian seasoning (bit of onion powder too) but otherwise followed this recipe closely. A real winner, thanks!

Delicious and easy! I threw some bacon bits in mine and topped it with sharp cheddar for a bit more saltiness. Thank you for the recipe!

Udon Peanut Butter Noodles

Reviewed: Aug. 5, 2014
Very good! The sauce is a bit heavy, so the nice thing is a little goes a long way and fills you up. I added a bit more garlic, sriracha, ginger, soy sauce, and honey as the peanut flavor of the peanut butter was a bit overwhelming.

Southern-Style Pork Chops

Reviewed: Jul. 5, 2014
This is very good. I don't like onion soup mix, so I sautéed fresh onion before dropping the chops in the pan. Do yourself a favor and don't use any salt until the serving table--I added a very little bit of garlic salt and this was WAY salty, even with no soup mix. Thanks; this was very good.

Cowboy Oatmeal Cookies

These were the bomb; a big hit! I added some dried cranberries and took some vanilla icing to the tops of them right out of the oven so the icing would melt, then stuck the cooling rack in the fridge to solidify the icing. Perfecto!

Chicken Enchilada Casserole II

Reviewed: Jun. 18, 2014
This recipe just gets raves out the wazoo. Pretty straightforward and it is a big favorite with family and friends. This would be a great potluck dish! I use homemade salsa to give it a little special touch and a splash of sriracha for kick! Thank you for this; it's at the top of my recipe box for easy access!

Land of Nod Cinnamon Buns

Reviewed: Jun. 18, 2014
These were marvelous! The only surprise I got was when I removed the damp cloth in the morning--they were enormous and were spilling out a little from my casserole dish. I would recommend using a slightly bigger casserole dish than you would put the frozen rolls in. The end result was wonderful! I made a batch with white icing and a batch with chopped pecans. They were both a huge hit, so thank you!

Easy Meatloaf

Reviewed: Jun. 18, 2014
Wonderful recipe; very easy and tasty. I got a lot of compliments! The only two small changes I made were making the pieces of sauteed onion a bit bigger than minced in order to have that pop of onion flavor upon biting in I also didn't have any mustard, so for the sauce I threw together some ketchup, garlic powder and Worcestershire sauce. Worked great! Thanks for this recipe!

Absolutely Fabulous Portobello Mushroom Tortellini

Reviewed: Jun. 4, 2014
This was the bomb...it came together in about fifteen minutes. We loved it and it's the perfect pasta dish when you need something a little creamy but not too heavy on those hot summer nights. Added extra mushrooms and it DID need a bit more salt and pepper than I thought, but this was a win. Thank you for the recipe, this is going in the permanent file!

Chicken or Turkey Tetrazzini Deluxe

Reviewed: Jun. 3, 2014
Really wonderful recipe. I substituted red cooking wine for the sherry (just didn't have any sherry!) and it came out fabulous. I added a bit more black pepper to taste..but really, this one is a winner. Without the banking time, I think I managed to get this together in about 15 minutes. Used leftover rotisserie chicken bits...MMM! Thank you for the great recipe.

Slow Cooker Pulled Pork

Reviewed: May 28, 2014
I would recommend waiting longer than stated in the recipe to shred the pork. I used shoulder as someone commented and the shredding was tough going...but the pulled pork that resulted was wonderful. I used A&W root beer and Sweet Baby Ray's Hickory Brown Sugar BBQ sauce. MMMM!! Raves from the guests.
