Gluten-Free White Bread for Bread Machines

I've made this bread many times exactly as stated in the recipe. It's my favorite gluten free white bread. It is very important to follow step 2 and check the consistency of the bread in the bread machine after 5 minutes.

Mock Chicken Fried Steak

My kids say this is a five star recipe. I made it gluten free by substituting rice crackers for the saltines. They are not as salty as saltines so I had to add 2 extra teaspoons of salt. They seemed to brown quickly so I only cooked them 5 minutes per side.

Mom's Country Gravy

I made a gluten free version using 1/2 cup pan drippings (country fried steak cooked in butter) in place of the vegetable oil. I substituted 1/3 cup corn starch for the flour. I did everything else as listed and it turned out fine.

Brazilian Cheese Bread (Pao de Queijo)

This recipe turned out perfectly for luncheon today - crispy on the outside, almost creamy on the inside. My children loved it and decided it tastes like Cheetos only better! I used the exact proportions stated in the recipe but omitted the garlic because I wanted the cheese to predominate. If you don't let the dough rest 15 minutes before you put in the cheese and egg, it will be very runny like a crepe batter. Things I Did Differently: I used grape seed oil instead of olive oil and warmed the liquid ingredients in the microwave until a little white foam appeared on the top of the mixture. I did the rest of the mixing as instructed except I hand kneaded the dough a bit in the bowl to get a smoother mixture. I used the 1 & 1/2 inch scoop that I use to make drop cookies to put the dough on the cookie sheet. But then, I went back and rolled each little ball between my well-oiled hands to smooth them. I had to bake them a little longer, but then, my oven's always slow.

Custard Cups

I made this recipe with whole milk and it was very good. If I make it again, I will probably mix the ingredients with my hand blender instead of my mixer. I think that will cut down on the foaminess on the top.

Strawberry Mousse

This recipe needed more sugar or Splenda to bring out the strawberry flavor. I would suggest adding up to a quarter cup to the strawberries, depending on tartness and 1/8 to 1/4 cup to the egg whites and the same amount to the whipping cream. The egg whites and cream would whip up much better with the added sugar.

Basic Rye Bread

This baked beatifully in my bread machine. It is a bit sweet but has a good rye flavor because it contains a higher than average amount of rye flour. I don't like caraway seeds so I made it without them and it turned our just fine. My kids liked it too.

Bacon Mushroom Chicken
