Buttercream Icing

Reviewed: Aug. 5, 2011
I doubled the recipe and it made the perfect amount to fill and frost a 12" layer and an 8" layer. The only thing I did differently was to use a little extra vanilla. I don't think I used quite 8 cups of sugar, and I didn't use 4 Tbls milk either. I just tasted as I went to get the sweetness and consistency I was looking for. I like shortening in my frosting because it holds up better under fondant. Frosting is hard to have an "exact" recipe because it responds differently depending on your environment. I added a couple of cups of sugar at a time to make sure it didn't go too sweet. Just taste as you go to get what you like. A great base to build on w/ other flavors too.

Braised Balsamic Chicken

YUMMY YUMMY YUMMY! I used 2 onions, only because I LOVE onions. I also used italian seasoning instead of the individual seasonings. Came together super quick. Was a hit for dinner. Will definately be making it again!

Best Brownies

Reviewed: Jan. 9, 2011
No what I was looking for. Came out to "cakey" for me, but I did use my stand mixer instead of doing it by hand. That might have made a difference in the texture. I also don't think the brownies are chocolately enough. The frosting has a very "different" flavor to it, due to the honey. I also had to add milk to make a consistency that was even close to being spreadable. Not something that I'll make again.

Ultimate Breakfast Casserole

After reading some reviews I made a few changes to the recipe. I used 8 eggs, more cheese and no butter. It was very yummy! Lots of compliments from our guests! Will def make again.

I didn't have any baking powder, so I used Bakewell cream instead. They tasted very yummy! I cut them in 9 squares and baked in an 8X8 pan....perfect!

Extreme Chocolate Cake

Reviewed: Jul. 2, 2010
I made this cake for a birthday party. It got RAVE reviews! You will get a soupy batter, but the cake bakes up wonderfully!! I baked it in a 1/2 sheet pan, and the amount of batter made a thin cake. which was ok, because I was planning on making 2 layers anyway. I found that the frosting recipe needed to be tweeked a little. 1 1/2 C of cocoa is A LOT, and I found that I had to add more milk and more powdered sugar to get the flavor and consistency that I like. This is a VERY rich cake/frosting combo. But that's how I like my chocolate cake!!! Enjoy!

Sour Cream Enchiladas

Reviewed: Feb. 5, 2010
Very yummy! Like others suggested, we put some sauce in the wrap, and added cream cheese to the sauce. We didn't have green chilies, so we used jalepenos, and was still great!

Chicken Cordon Bleu II

I didn't coat the chicken in flour, and i doubled the sauce. To the sauce I added some more swiss cheese, and that really punched up the flavor. Overall, really good!!

Colonial Brown Bread

Reviewed: Sep. 20, 2007
This is a good bread, but not 5 star worthy in my opinion. I like my bread a little sweeter, so next time I make it I'll use a little molasses to sweeten it up. If you like a hearty "wheaty" bread, this one is good.

Kickin' Meatballs

Reviewed: Jan. 17, 2006
The flavor of these meatballs are great! I didn't have a big enough skillet, so I baked them. They came out a little dry, but I forgot about them in the over for a while, oops! I think next time I'll make a brown gravy with complementing spices in it to bake them in.

Chocolate Cobbler

Reviewed: Mar. 31, 2005
This wasn't nearly as good at I thought it was going to be. It was very runny. Maybe I'll try it again and use less water like everyone else suggested. I made it for a potluck at work and had to make something else last minute cuz this wasn't something i was going to serve to other people besides my boyfriend and myself.

Slow Cooker Sweet and Sour Kielbasa

Reviewed: Feb. 22, 2005
This recipe is fabulous. I didn't follow the amount of ingredients to a "T", but kinda went with my gut. I think i added a little more Brown sugar, and a little extra hot sauce. They are sweet at first, but have a little kick to them in the end. FABULOUS! Will be making these again!
