Oven Roasted Parmesan Potatoes

I am not a big potato person, but I thought this turned out good. I did a couple of things different than the recipie said. I sliced the potatoes fairly thinly. I didn't have grated parmesan, so I used shredded parmesan. I ended up using much more of everything than it called for - I had to make more seasoning twice. I guess because I sliced the potatoes? I used two cookie sheets and put the potatoes in a single layer on the sheets and flipped them once. I thought they were going to end up greasy from tossing them (well, I more like dipped them) in the oil (which I used way more of as well), but after I flipped them once and finished cooking them off they weren't greasy. Just crispy and pretty darn tasty.

Smoky Grilled Pork Chops

Delicious. I've been wanting to try using liquid smoke, and I was delighted with the way this turned out. I followed the directions as written and combined the liquid and dry ingredients. It ended up being a paste. I did double up on the ingredients for the coating because it seems like I never have enough coating. I realized after doing it that I didn't need to in this case. If you rub it in good the pork chop will only hold so much. It's winter and there's snow on the grill, so I fried these in just a little vegetable oil. They turned out really good. I would make this again, for sure.

Yummy Roll Ups

I've been making this for years for covered dishes and stuff like that. Absolutely amazing and delish! I didn't SOUND like at good combination at first, but trust me, it's delicious!

Roasted Okra

This turned out very good. Even my husband enjoyed it, and he didn't THINK he liked Okra. I added a tad too much salt, but there was no slimyness or anything. Would make again, for sure.

Grilled Marinated Shrimp

I followed the directions exactly, with the exception of I marinated this for about four hours instead of two. I used frozen, already cooked shrimp because that was all my favorite grocery store had. So really my husband just nuked these on the grill for a minute until they were warmed through. Husband loved it, and I loved it. Will do this one again.

Rainbow Pasta Salad I

I loosely used this recipe as a guide. I omitted the olives, as the hubby doesn't like them. I used Parmesan Cheese, and also added cucumber and cherry tomatoes. I used a package of powdered Italian dressing and almost a full bottle of Parmesan Italian dressing. Everyone loved it.

Baked Soy Lemon Chops

These were very good. I used the reduced sodium soy sauce. I ended up putting the ingredients together in a freezer bag and letting it marinate for 4 - 5 hours in the fridge. I guessed at the amounts of each ingredient, since my internet crapped out on me and I couldn't get to this web site...but they turned out delish. I would make this again.

Almond-Topped Chicken

Simple, different, and tasty. A very good recipe. I used more almonds than called for, but that's about the only thing I did differently. Everyone seemed to really enjoy this dish.

Country Apple Dumplings

Made this for dessert last night. A very simple dish to make - one I will be able to do from memory quite easily in the future. I will def. make this again. Next time I may use part splenda to slim it down a bit. But it was sooo good. Everyone loved it. Thanks!

Pesto Chicken Florentine

I made this dish last night. It was very good - everyone enjoyed it. I probably used more of everything than the dish called for...but more is more. :) I would make this again. It was simple and delicious. I used wheat pasta and canned Alfredo sauce. Very good.

Champagne Shrimp and Pasta

This turned out very good. I followed the recipie pretty much to the letter with the exception of adding about twice as much mushroom than it called for and a little more shrimp than it called for. Oh, and I left out the scallion as the boyfriend does not like them. And added garlic as we're nuts about some garlic! It passed the boyfriend test - when I asked him if it was one to make again he shook his head yes while scooping more mouthfulls out of his plate. It also passed the son test - he thought he wouldn't like it but ended up asking me for seconds. All in all a very good dish and one I'd definately make again.

Overnight Blueberry French Toast

My family really enjoyed this recipe - my husband said it may have been one of the best dishes I'd ever made. I forgot the butter at the very end, but didn't miss it at all. I also added cinnamon to the top before baking it. I didn't mind how sweet it was from the cream cheese, but I wonder if there would be a way to freeze it partially and cut it into strips with a vegetable cutter or something for a more even distribution. Very good and I will definately make again - maybe with strawberries as some others have suggested.

Feta Cheese Turkey Burgers

We tried this recipe twice because the first time we accidentally used too much oregano, and only had black olives. We thought that was why we didn't like it. It wasn't. The second time we followed the recipe to the letter. I REALLY wanted to like this recipe. I expected to like this recipe, based on the reviews. I like all of the ingredients in this recipe quite a bit. But, it just didn't work for us. It was edible, but none of us (Me, my boyfriend, and my son) were racing back for seconds. As a matter of fact, my son and I couldn't eat an entire patty. I'll stick to "my" way for fixing Turkey Burgers from now on.

Broccoli-Cauliflower Salad

This was GREAT! I was a little iffy about the recipe at first, but it turned out delicious. Both the boyfriend and I gobbled it all up in two meals time! I didn't have any fresh broccoli or cauliflower, and since I am not crazy about uncooked broccoli/cauliflower, I used frozen and cooked it in the microwave for just a little while. I allowed the veggies to cool, and then layered them as per the instructions. I also added some onion since I happened to have some, and some sunflower seeds as other users suggested. I didn't have any White wine vinegar, so I used Red wine vineger and splend in the dressing, and it tasted fine to me. We've since purchased the white wine vinegar, so next time I'll try it with that. Great recipe. Thanks!!

Healing Cabbage Soup

I LOVED this recipe. It's one I'll be making again soon. I used more like a full head of cabbage, and since I didn't have Italian tomatoes, I used plain and added Italian seasonin as some other users had suggested. I also added some Red Pepper as another user suggested to give it a little more kick. The entire pot was gone in about two meals time! Thanks for a great recipe!

Oven-Roasted Vegetables

Apparently I'm one of the few that wasn't impressed with this recipe. I actually didn't go by it 100%, and am glad I didn't. With only Salt and Pepper to season it with, it was just way too bland. I added all kinds of spices, and it came out pretty good.
