Butternut Squash Bisque
Excellent! The perfect winter soup. I have tried this with other types of squash as well, and even substituted some sweet potato for the carrots, and it always turns out great! The butternut squash is the best though!

Oatmeal Blueberry Muffins
These blueberry muffins were quite tasty!! I substituted splenda for the sugar, applesauce for the oil, and 1/4 whole wheat flour for some of the regular flour, and they turned out great! A little dry, though, so it might be worthwhile to use the oil instead of the applesauce, or try pureed prunes.

Cream of Mushroom Soup I
I made quite a few changes, but the basic recipe was the same. I used 1/2 c milk and 1/2 c sour cream instead of half and half, which gave it a tangy flavor. I also only had 4 cups of fresh mushrooms, so I chopped up carrots and used a cup of those. Finally, I didn't have any thyme so I used a little sage, some fresh rosemary, and 2 cloves of fresh garlic. I think it really needed the seasoning, so it turned out great. If you're going to use this as a main course, it makes more like 3 or 4 servings, not 6. Overall, a great basic soup!
